Slow cooker chicken enchilada soup (low cal/low carb)

Chicken enchilada soup
1.25 lb boneless skinless chicken breast, raw and cut into bite size pieces
1 medium onion diced
3 celery stalks diced
1 green bell pepper diced
1 cup cabbage diced
3 garlic gloves, minced
1 can Ortega green chilis
1 can diced tomatoes
Cilantro (I used about 2 tablespoons)
2 cans La Victoria red enchilada sauce
7 cups low sodium chicken broth
Put everything in the crockpot ( I have a really big one, this recipe makes a lot of soup). Cook on high for 6 hours or simmer is a stock pot for 6 hours.

Depending on exact ingredients used, it should be around 1000 calories for the entire pot. I make something very similar and it comes in at about 1005 for the pot. Serving size is determined by how hungry I am0
