I make this all the time too! I love it. I will use the left-overs the next night as my filling for enchiladas. It is so yummy!

One time I just used 2 cans of diced tomatoes.. it was fine! I don't think the Rotel is spicy but those green chili's might not help the ulcer.. I'd avoid!0 -
