PB2 Peanut Butter Chicken

So, I just found a recipe for Peanut Butter Chicken, and substituted PB2 for what it called for in regular Peanut Butter. I haven't tried this yes (going to cook it tonight), but just substituting PB2 made a DRASTIC change in the stats for this recipe. Just thought I would share :happy:

PB2 Peanut Butter Chicken:

6 X 4oz boneless, skinless chicken breasts
1/2 cup Fat Free Italian Dressing
1/2 cup white vinegar
1/2 Tbls low sodium soy sauce (it originally said to use 1 Tbls, but PB w/o salt, so I cut it in half since PB2 has some salt)
5 packets Stevia
6 Tbls PB2 (reconsitute before use)
1/2 tsp crushed red pepper flakes (for very mild use 1/4 tsp)

Topping:
Green onion, chopped (1Tbls per serving)

Preheat oven to 375 degrees. In a small bowl whisk together everything except the chicken and green onion. Place raw chicken in an oven proof (9x11) dish and pour sauce over top. Bake uncovered for 30 minutes or until chicken is done. Top each portion with 1 Tbls chopped green onion.

Enjoy!! Let me know what you guys think. Like I said, I haven't tried this yet, but it's on my menu for tonight!! :happy:

    I had this for dinner and it was FANTASTIC!!! Completely going to make this again. It turned out so much better than I thought it would!!

    I'm not familiar with PB2. Does this make it taste like a Satay Chicken dish?

    I *LOVE* PB2! Works so well in recipes, or as a topping. I made a chicken and veggie peanut noodle dish two weeks ago, and I have been craving it ever since! I will definitely be trying your recipe above soon :) Thanks for sharing!

    PB2 is a powder made from pressed peanuts, with 85% of the oil removed, so it is a great peanut flavor with far fewer calories. It's made by Bell Plantation.
