So I love the Healthy Choice Steamers Red Pepper Chicken! And I experimented this afternoon and I came up with something very close to it! (first time making it, needed more chicken)
1 pound of cubed chicken breast
1 bag of cut up broccoli
1 bag of wide egg noodles
1 diced red pepper
1 diced onion
1 diced clove of garlic
6 Weight Watcher's White Cheddar Wedges (or your favorite flavor)
1 can cream of chicken soup
2 table spoons of chilli powder
I cooked the cubed chicken with the diced peppers and onions. Whenever the chicken was done I added the cream of chicken soup, WW cheese wedges, and the chilli powder. Once the cheese was melted and it was well mixed, I added about 3/4 C of water to "stretch" the sauce. I then added the cooked broccoli and then the cooked noodles. It tasted awesome!
According to the recipe tool on MFP it is only 290 cals per serving! It serves about 12 people.

Made this for dinner tonight, absolutely FANTASTIC. I used 6 slices of Mozzarella cheese cuz it's lower in sodium. The nutritional count is:
322 cals, 6g. fat, 48g. carb, 19g. protein, 7g. fiber, 262 mg. sodium.
I used whole wheat noodles and Mozzarella, otherwise, followed the OP recipe exactly.0 -
B-U-M-P! That sounds awesome! Thanks!0
