What vegetables have you tried? What is it about them that scares you?

I'm not gonna lie, some veggies are gross to me. I have yakked up some spinach before, so I typically avoid that, but I have no problems eating other types of vegetables. In fact, I really enjoy lots of vegetables, like carrots, squash, green beans, peas... etc.

Fruits are good too, but the nutrients in them are different.

If you like brown rice, you should try to incorporate it into your meals. I know you said it is more expensive, but I don't find that it is prohibitively expensive. Can you mix half white rice and half brown rice so that you are still getting some of the fiber and minerals that are in it?
  • I agree with fiberartist. You need vegetables—fruit and vegetables are NOT interchangeable. It's great that you eat fruit, but the nutrients in fruit are not the same as those in vegetables. Not to mention, fruit has natural sugar, which is still sugar. Fruit-sugar is better than processed sugar, but still not great. They're sweet, that's probably why you like them, right? Have a few pieces of fruit per day, but you need to start getting vegetables into your diet. If you could tell us why you don't like vegetables (I have a hard time believing that you vomit them ALL up after eating them, lol), or which ones you really want to avoid, I'm sure I speak for everyone when I say we can point you to some quick easy recipes and snacks that include veggies! :D xo

OP, you dont NEED veg. I'm the same as you, and ive never felt better!

I just take vitamins+minerals supplements. Sure, its not as good as getting tons of veg, but you dont HAVE to just to lose fat and get fitter. Just depends how healthy you want to get.

I could never get my husband to eat salads when I first met him. He said it was "rabbit food".

True, rabbits like lettuce - maybe because they nibble it into little bits. SO...

I chopped the heck out of the salad, some chicken, some hard boiled eggs, carrots, celery, cucumbers and a little shredded cheese. Threw some ranch dressing in there and mixed it all up and gave it to him. He ate the whole thing and said "IS there any more?" Ahhh, victory!

He said it wasn't like "salad" because he didn't have to fight with big pieces of weird lettuce that tasted kind of like dirt. He now has graduated to throwing in beans, corn, and tortilla strips for a Mexican twist. You could add some edamame, rice, bean sprouts and some teriyaki for a little asian flair. And always chop it all up - the choppier, the better.

Just don't think of it as "salad". Maybe that would help?
  • Hahahaha,i get you ;D xo

vegetables and fruit are totally different.

fruit are higher in carbs, sugar, and calories compared to veggies.

not to mention they cant replace the micro-nutrients you get in veggies.

yes fruit are still good for you, but veggies are just as important if not more so.

you need to learn how to make veggies in a way that your compfortable with.

And you should consider eating rice once a day vs twice if possible. unless your only eating a scoop at a time and not eating too many carbs elsewhere, thats a bit over board.

I have eaten white rice all my life, but about a year ago, switched to brown rice. I find that brown rice fills me up way more than white rice does; I eat less than half the portion in brown rice than I used to eat of white rice. So, I feel like I spend about the same for brown rice. Hope that makes sense, and helps you!
  • You should really try to get in more veggies! I know, I know, VEGAN is in my name so you're thinking I'm some crazy veggie-lover but I guarantee you, before I was vegan, I HATED vegetables. Like despised them, ahha.

Some of my favorite ways to get in veggies when I first began incorporating them into my diet were:
    1. Making my own grilled asparagus with salt and pepper.
    2. Good old bell peppers & hummus
    3. Adding in things like broccoli, mushrooms, spinach, etc into stir-fry like concoctions or pastas.

And I still do those things! You don't have to scarf down a bowl of cauliflower or something to get in your vegetables.
But seriously, you should try not to get all of your fruits and veggie servings merely form fruits. Among many reasons one is that they have a lot of natural sugars and carbs you can minimize with vegetables.

Most vegetables are more calorie-dense too. Eat more food, less calories :)
  • I dont think vegan loves vegetables ! LOL, Thanks friends

You could juice some veggies. It doesn't give you the fiber that you lose from juicing but it gives you the nutrients. Some veggies are bitter when juiced but you can do a simple recipe of celery, carrots, and apple. The apple is sweet enough and so is the carrot and the celery just adds a little "saltyness" . Very delicious! Just don't drink the same thing every single day. Maybe once or twice a week, and you can alternate a different vegetable in there once you get a little more accustomed. Like a bunch of spinach or a parsnip or some cabbage. Yum!! Speaking of Cabbage, try some homemade coleslaw. Shred some red or green cabbage, some carrot and just mix some veganaise (or mayo), mustard, apple cider vinegar and some sugar. Pour over shredded veggies and let sit for about an hour. and eat up!!
