Eggplant-Don't know what to do with it!!!

  • I do a stuffed eggplant.

    Brown 1 lb ground turkey breast with 1/2 finely chopped shallot & 1 crushed garlic clove. Remove from pan. Cut an eggplant in half lengthwise, scoop out insides leaving 1/4-1/2" shell. Spray inside of eggplant with Pam & salt & pepper. Chop insides into 1/2" cubes. Spray pan with Pam and brown eggplant, 1 cup chopped mushrooms, 1 cup chopped zucchini; add can of fire roasted tomatoes and ground turkey, mix together. Spoon mixture into eggplant shells, top with tomato sauce (homemade or jarred pasta sauce-your choice!) & mozzarella &/or parmesan. Bake at 350 for 20-25 minutes. You can serve it with pasta or on its own.

    I made this recipe up!! Let me know how it is...it's actually under 250 per serving without the pasta!!
