Lina's Chicken Lo Mein! (with pic)
I was in the mood for lo mein last night, so I threw this together. It was super easy and didn't take too much time to make.
3 - 4 oz boneless skinless chicken breast, cut into cubes or however you like to slice and dice your chicken
1/2 onion, sliced into half moons
1/2 tbs sesame oil
1/2 can chicken broth
1/4 cup low sodium soy sauce
1 tbs teryaki sauce
1 teaspoon red pepper flakes
1/2 teaspoon sugar
a handful of baby carrots, I sliced them in thin slices
a bag of birds eye broccoli florets, thawed
1/3 box spaghetti noodles, cooked
In your cooking pan add the sesame oil, then saute the onions, add the chicken, cook and then add the veggies, let them soften. Once the veggies are softened, add the cooked noodles and then pour the sauce on top, mix, and let simmer for a few minutes. Eat and enjoy! Great flavor and pretty low in calories!
This serves about 4 decent portions - 286 calories each serving!
ETA: If I would have added mushrooms for sure if I had them at home.

And I don't know why the sugar? I added it so it gives the sauce a little sweetness. You can leave it out and i'm sure it will taste just as good!0 -
