Curried Sweet Potato and Cauliflower Soup
Ingredients:
3 cups sweet potato, chopped
2 cups cauliflower, chopped
2 tsp garlic, crushed or minced
2 tsp olive oil
1 cup onion, chopped
1 tsp curry powder
1/2 tsp cinnamon
1/8 tsp salt
4 cups vegetable or chicken stock
Directions:
1. Place sweet potato and cauliflower in a microwave-safe dish with ½ cup water. Cover and microwave for 8 to 10 minutes, or until vegetables are tender. Set aside.
2. Saute garlic and onion in oil in a large stock pot over medium-high heat until softened.
3. Add curry, cinnamon and salt.
4. Combine onion and sweet potato/cauliflower mixture in a food processor and puree until creamy smooth.
5. Pour all ingredients back into the stock pot. Add vegetable stock and heat to desired temperature, adding additional stock if desired.
