Loaded Baked Sweet Potato
Wash and poke a medium sweet potatoe with a for several times. Bake for 30 mins in a 400 degree oven. Top with black beans, salsa, a dab of fat free sour cream and some green onions. Delicious and healthy and will keep you full until snack time!

I make the same thing. Sometimes for a change, I will make a Sweet Potato Quesadilla. Just add a whole wheat tortilla and cheese to your recipe. YUM0
