Great snack alternative to wings. I've made these a few times Including Super Bowl this year and they were the first thing gone!!!

Buffalo chicken bites

1 lb Chicken breast cut into bite sized pieces
1/4 teas cayenne - more if you like it hotter
1/4 teas sea salt

Toss and spread in a thin layer on a cookie sheet. Broil for 3 minutes.

3 Tbls Buffalo Wing Sauce - I use Franks
1 Tbls melted butter
1 Tbls Water

Mix together and pour over broiled chicken bites. Broil additional 2-5 minutes, til done.

Serve with lite dipping sauce.

Also good on salad!!!!!

It's to the point that I just make a huge batch and freeze, that way when I have company, I can just defrost and reheat quickly!!!! My wing eaters LOVE them!!!!

Just wondering why you need to add the butter and water instead of just pouring hot sauce (or other sauce) over it?

The regular wing recipe calls for 3:2 ratio of hot sauce to butter, I kept half the butter and replaced the other half with water.

Sounds great! I don't like buffalo sauce so I'd probably have it on the side for my hubby.

I use a plain greek yogurt mix with the ranch powder and wala a great alternative dip for those great buffalo bits

I usually use greek yogurt, blue cheese crumbles, and a bit of garlic.
