Jalapeno Popper Stuffed Chicken Receipe!

I got this receipe from a Beyond Diet member, my husband and I tried it last night and it was amazing! Lots of flavor! We used green chilis instead but the outcome was great!!!!!

Cook Time: 10min
Servings: 8
Ingredients
8 oz raw cottage cheese
1/2 cup raw shredded cheddar cheese
2 jalapeno peppers, seeded and minced
4 strips of turkey bacon, diced
4 (6 ounce) skinless, boneless chicken breast halves
Directions
1. Cook the turkey bacon in a skillet, let cool and then dice
2. Stir together the cottage cheese, cheddar cheese, bacon, and jalapenos in a small bowl.
3. Cut a pocket horizontally through the thickest side of each chicken breast, and fill with 1/4 of the cheese mixture.
4. Place on george forman grill (seam side towards the incline of the grill) for about 5 mins (or more for golden color). If your chicken breasts are thick, they can be finished in a 350-degree oven.
If you don't have a george forman grill you can use coconut oil in a pan on the stove to cook about 8 mins on each side. Make sure to seal the pocket with toothpicks so the stuffing doesn't come out.

I don't have the calorie count, but you can adjust it for less calories. We used very little cheese when we did it and it was still awesome!!!!!0

I guess I could try breaking it up on the calorie counter and get back to you guys, when the receipe calls for "raw" it means organic, the Beyond diet is a strictly orgainc based diet that is about portions more then calories but I try to watch both and estimate. When we made this, I knew I had some calories to spare. I used low fat cottage cheese and low fat chedder cheese, I don't always buy organic because it can be expensive but I try.0

Ok, so used the calories counter and if you were to eat this whole thing which makes like 8 servings, and used reduced fat cheddar cheese and lowfat 1% cottage cheese you would be at or around 834 calories, so its a great meal to share0

Sorry I am new, what does "bump" mean?
When I joined I had the same question. It can be used for two reasons. 1. To "bump" the tread up so more people can see it. More replies means it stays at the top of the forum. OR 2. So you can see it in the "My Topics" section if you want to come back to it later.

We had this the other night at my house! SO GOOD! I would suggest using the oven......if you do it on the grill you will lose most of your fillings!0
