"Hiding" Veggies in Food

I am not a fan of vegetables but I've been trying to sneak them in my food. I put pumpkin in my pancakes and add tomatoes and bell peppers to my eggs. Any other ideas?

    We chop up broccoli slaw and put it in our turkey meatloaf. Very good and my kids love it.

    I know what you're going through. I didn't eat vegetables until I joined here. I make egg white omelets with spinach, tomatoes, and grated Swiss cheese. I also made a chicken meatloaf tonight with grated zucchini, grated carrots and diced tomatoes. One day this week I'm going to bite the bullet and experiment with eggplant.
  • Chopped vegetables as pizza toppings.
    Use butternut squash or cauliflower in white or cheese sauces to replace half the dairy.
    Add a handful of leafy greens to your fruit smoothies.
    Add chopped vegetables to pasta salad and stir-fries.
    Swap out more beans for meat in chili recipes.
    Add shredded carrots or zucchini to pasta sauce.
    Replace pasta noodles with ribbons of zucchini.
    Add cauliflower to white sauces.
