    Just make some regular food, and color it green. Ireland doesn't even really celebrate this, it's an American thing anyway.......

    Hate to disappoint you but, Ireland do celebrate Paddy's Day and do it in a VERY big way.

    I'm Irish! Yes we do celebrate Paddy's Day. Cabbage is a real Irish side dish - make colcannon http://www.hellmanns.ie/recipe.php?recipe=3&start=10

    I'm Irish and we defo celebrate :)

    I suggest bringing Colcannon... its a typical Irish side dish to accompany a main course and yummy and easy to make, it can be heated in the microwave... you can always swap the ingredients for low cal options...

    Ingredients
    1 pound cabbage
    1 pound potatoes
    2 leeks
    1 cup milk
    salt and pepper to taste
    1 pinch ground mace
    1/2 cup butter

    Directions

    1.In a large saucepan, boil cabbage until tender; remove and chop or blend well. Set aside and keep warm. Boil potatoes until tender. Remove from heat and drain.
    2.Chop leeks, green parts as well as white, and simmer them in just enough milk to cover, until they are soft.
    3.Season and mash potatoes well. Stir in cooked leeks and milk. Blend in the kale or cabbage and heat until the whole is a pale green fluff. Make a well in the center and pour in the melted butter. Mix well.

  • Ive just put a stuffed mushroom recipe in th recipe section of this site. Im here in Dublin and have been for the past 32 years!! roll on Paddy's Day...one of my fave days of the year! great atmosphere around he town very family orientated! If you dont fany the mushrooms i second the CHAMP or COLCANNON, both VERY traditional.

    colcannon - mashed potatoes mixed with a bunch of kale, cabbage, leeks, garlic, green onions, butter ect.
    soda bread is pretty popular too


    Personally I'd pick a bunch of green dip-able vegetables and serve them with spinach dip.
