Recipe for ONLY two choclate cupcakes!

This is for those of you who are like me and LOVE your dessert but hate having 24 cupcakes around tempting you to eat them. It's a recipe for two chocolate cupcakes, and two cupcakes ONLY!

    I got a great book awhile back called Small Batch Baking. I love it. I has recipes for 2 cup cupcakes, 6 cookies, etc. If you like to bake from scratch but don't need 3 dozen cookies or whatever, I recommend it. It's perfect for those special nights when you want a nice dessert to share with the spouse or kids but no leftovers.

  • The only problem is that it is a huge waste of energy to heat up and oven and bake only two cupcakes... Better to make a whole batch and freeze them in pairs... Less time consuming too! I do have a recipe for a microwave cake that is made in small size amounts, that is pretty decent when eaten warm...

    Love this! And as for wasting energy heating up the oven, I plan on popping mine in the oven alongside dinner :)

    I figure it is worth the extra wattage NOT to have a bunch of extra cupcakes around calling my name.

    I entered the ingredients into a recipe here and it comes out to about 310 calories for the 2. This doesn't include the frosting or chocolate chips. Plain, just the way I like 'em.

    Has anyone tried this one:

    3, 2, 1 Cakes. (3 tablespoons mix, 2 tablespoons water, 1 minute cook time)

    1 Angelfood cake mix
    1 Cake Mix (any flavor)
    2T Water

    Put the cake mix in a zip lock bag and mix well. For each cupcake remove 3 tablespoons of the mix from the bag and add 2 tablespoons water, Mix well and put into a microwave safe container. Microwave for 1 minute. Done!
