Lots of bananas!!

Hello, Anyone have a low calorie/low fat banana chocolate chip muffin recipe? My freezer is full and I need to use them!

  • When I make banana bread, I use applesauce instead of oil, a sugar replacement like splenda or truvia. And egg beaters instead of eggs and it cuts the calories and fat alot. This is the recipe I use.

    2 eggs lightly beaten (2/3 cup egg beaters)
    1 cup mashed bananas
    1/3 cup oil (1/2 cup applesauce)
    1/4 cup milk
    2 cups flour
    1 cup sugar ( splenda)
    2 tsp. baking powder
    1/4 tsp salt
    4 oz of chocolate chips

    oven 350
    mix eggs, bananas, applesausce, and milk.
    Add flour,sugar, baking powder, and salt. Mix together just until blended.
    either use loaf pan 55 min. or muffins 20-25 min. Good luck. I can't seem to keep out of banana bread, it's just to yummy.

    Not muffins, but cookies. I havent tried this yet but want to as soon as I get some more bananas

    That looks like a good recipe but I would use 1/2c canned pumpkin (in place of oil) and 40/60 white flour/oat flour (or whole wheat). I would use plain ff yogurt in place of the milk, dark choc chips and instead of sugar, use 1/2 cup brown sugar.

    Are you set on making muffins with them? Because you can make banana "ice cream" super easy and its beyond yummy and healthy!

    Are you set on making muffins with them? Because you can make banana "ice cream" super easy and its beyond yummy and healthy!

    Would that be just by mushing up the bananas or would it involve more than that?

    ^^^Great recipe for banana bread! I sub apple sauce for the shortening and stevia or splenda for the sugar. Could probably also use wheat flour. I haven't tried that yet but It would probably be fine. Might make it a tad dry though. Probably a little extra banana would solve that.

    Freeze a banana for a couple of hours (use one banana for single serving, use multiple for more, it freezes well). Chuck it in a magic bullet and blend. It will blend into the consistency of soft serve ice cream (if you really need to, add a tbsp of sou/almond/reg milk to help) You can then add some berries or some peanut butter or something extra. Its an amazing ice cream substitute!
