Chicken Noodle Soup
Soups are a great way for dieters to fill up on low calorie food. Chicken noodle soup can hit the spot and kill hunger pains. Most soups can be prepared to be very low in calories by avoiding the use of oils and thickeners.

Make your chicken noodle soup with a low salt chicken broth or oxo cube and add plenty of chopped vegetables. Then add the pre-cooked chicken pieces and use a small amount of pasta, wholewheat is best, or throw in a handful of noodles which will cook quicker.

This makes a tasty chicken noodle soup and that is low in calories and a portion can also be frozen and used as an emergency ration.

Chicken Pitta
Use pitta bread to eat grilled chicken on the go. You can also stuff pitta more easily with extra vegetables as compared to a sandwich when these are likely to fall out. The extra vegetables will bulk out your snack whilst making it low on the calorie count. A whole wheat variety of Pita bread is preferable as this will not have such a drastic impact on blood sugar levels and contains extra fibre to help keep you feeling fuller for longer.

Use a low calorie dressing such as low calorie salad cream or add some low fat cottage cheese for some extra protein and a little sauce.

    I buy chicken breasts and freeze them individually in plastic bags before freezing them. I pull them out the night before I plan to cook them, put marinade in the bag and put them in the fridge to thaw.

    Two marinades I have been using:

    Honey Lime (1 breast)
    1 tsp honey
    1 tsp lime juice
    1 tsp garlic
    *Mix ingredients and pour into bag. Push around in bag to coat.

    Balsamic (4 breasts)
    1/3 cup balsamic vinegar
    1/2 cup low sodium chicken broth
    1 tsp garlic
    1 tsp Italian seasoning
    *Mix ingredients and pour into bags. Push around in bag to coat.

    One of my staples is Spicy Honey-Brushed Chicken Thighs. A lot of flavor in this one. I omit the salt:

    Spicy Honey-Brushed Chicken Thighs
    Ingredients
    • 2 teaspoons garlic powder
    • 2 teaspoons chili powder
    • 1 teaspoon salt
    • 1 teaspoon ground cumin
    • 1 teaspoon paprika
    • 1/2 teaspoon ground red pepper
    • 8 skinless, boneless chicken thighs
    • Cooking spray
    • 6 tablespoons honey
    • 2 teaspoons cider vinegar
    Preparation
    • Preheat broiler.
    • Combine first 6 ingredients in a large bowl. Add chicken to bowl; toss to coat. Place chicken on a broiler pan coated with cooking spray. Broil chicken 5 minutes on each side.
    • Combine honey and vinegar in a small bowl, stirring well. Remove chicken from oven; brush 1/4 cup honey mixture on chicken. Broil 1 minute. Remove chicken from oven and turn over. Brush chicken with remaining honey mixture. Broil 1 additional minute or until chicken is done.

    I used 3 large chicken breasts that I cut in halves. Omitted the butter. Layered 1/4 sweet onion, baby carrots, and celery. I also added spices: Old Bay, dried parsley, paprika, seasoned pepper, garlic & herb salt-free, onion powder. Substitute healthier (low-fat/low-sodium) cream of chicken soup, 2c low-sodium chicken broth instead of water, and the healthier bisquits. I only used 1 can of biscuits and cut them with a pizza roller into fourths, which was perfect. Set the cooker on high for 6 hours and after 4 hours threw the biscuits in.

    Added some frozen peas when I dished it up and it came out delish! My bf said it was the best chicken & dumplings he's ever had. I'm sure he's not biased at all... ;)

    For more protein in the soup I use barley instead of pasta, and if I have some navy beans in the frige (I cook a pound of dry beans to use when I want - avoids the salt of canned) I'll throw in a quarter cup of those too.

    It's easy to make soup in big quantities and freeze in individual containers - that way they don't leak all over the bottom of my bag on the way to work!
