I made this last night and really enjoyed it. I made mine in a 2qt 8x8 dish, had to bake for 15 minutes longer than recommended (total 55 minutes), substituted nutmeg for the pumpkin pie spice since I didn't have any, but it was yummy. Cut into 6 servings it came out to 133 calories per serving (I counted the Splenda and spice calories in my calculations which may explain the small difference). Ate 2 slices, it was yummy. :-)
Also, I would recommend letting the cream cheese sit out and get to room temperature before mixing everything together. I didn't, and thus no matter how much stirring and squishing I did, I was left with little lumps of cream cheese in the finished product. Definitely let the cream cheese warm up a bit before you get started.0 -
