Light and Lean CornBeef &Cabbage Pie

Corn Beef and Cabbage Pie from Cooking Light, I think.
My mother started making this years ago and now it is a staple for St. Patty's day. You can eat it and not feel guilty. the only problem I have is trying to STOP eating it ;)

•1 (2lb) corned beef brisket

•1 medium cabbage

•2 can no salt beef broth

•½ cup low fat shredded Swiss cheese

•½ cup skim milk

•2 tablespoons+ 1 tsp all purpose flour

•2 tablespoons water

•1 tablespoon brown sugar

•2 tablespoon coarse grained mustard

•¼ teaspoon pepper

•8 sheet commercial frozen phyllo pastry, thawed

•Butter flavored cooking spray.

•Chopped parsley (optional)

•Trim fat from brisket; place brisket in pot cover with water to a depth of 2 inches above brisket. Bring to a boil, cover, reduce heat and simmer for 3 hours (or until VERY tender) you can also do in a crockpot high for 1 hour low for 3. Drain. Shred Meat.

•Separate cabbage into leaves. Place leaves and beef broth in a pot; bring to a boil; cover, reduce heat and simmer for 30 minutes. Stir a lot. Drain, reserve ¾ cup water. Arrange leaves in an oval foil pan. Top leaves w/ corned beef and cheese.

•Combine reserved liquid and milk in a sauce pan. Combine flour and 2 tblspns water stirring well, add to milk mixture. Cook, stirring constantly over medium heat until thickened. Remove from heat, stir in brown sugar, mustard and pepper. Spoon over cheese.

•Place phyllo on a damp towel; coat each with spray and layer over mixture. Cut 1 inch slits evenly around edge. Press. Bake @ 350 for 30 minutes

I usually make mine with soda drop biscuits as well--


•2 cups SELF RISING flour

•1/3 cup sugar

•3 tablespoons margarine

•¾ cup nonfat buttermilk

•1 egg lightly beaten

•Vegetable cooking spray

Combine flour and sugar in medium bowl, add in butter slowly. Mixture will resemble coarse corn meal at this point.

•Combine buttermilk and egg until blended, add to flour mixture stir in just until dry ingredients are moistened. .

•Drop mixture by rounded tablespoons, 2 inches apart on baking sheet coated with cooking spray,

•Bake at 350 for 10-12 minutes or until lightly browned, makes 16 biscuits

101 calories each fat 2.7 protein 2.5 carbs 16.7 fiber 0.4.

    I'm thinking about trying this over the weekend. Not sure if Joe likes cabbage though, so I might have to run it past him first.

    I have had people that do not like cabbage love this pie! promise.
