Recipe: Crispy Coconut Chicken (366 calories for a generous

I thought I'd share this recipe as I altered the usual recipe to make it lower carb without breadcrumbs using coconut instead as I was going to make it for someone on a low carb diet but didn't in the end. Tried it tonight anyway and it was really tasty!
Serves 4
600g of chicken breast (4 breasts)
80g dessicated coconut
Black pepper (to taste, I put quite a bit in)
1/4 teaspoon garlic powder
1 egg, lightly beaten
Cut the chicken up into strips and coat in the egg. I just plonk it into the bowl with the egg and then stir it up.
Mix the coconut, pepper and garlic powder and then coat the chicken in the mix. Again, I transfer the chicken, minus any spare/loose egg into the mixture and stir it up which coats it fairly well.
You then have two options, depending how healthy you want it to be!
Either... shallow fry in hot oil.
Or... place on a baking tray, spray with fry light or something similar and cook for about 20 minutes until the chicken is cooked through and browned, turning once half way through.
It crisps off just like breadcrumbs but it's healthier and, I think, tastier!

Protein: 50g
As you can see, I served it with sweet potato chips and pepper. I had some mayo but actually didn't end up using it as everything had such a nice flavour.

I hate to sound lame but what is dessicated coconut? Buy other than that I can't wait to try this0

Coconut that's already chopped up into tiny little bits. Can usually find it in a cooking isle for cakes and things. I use it on my truffles.0

The recipe looks amazing, though be aware that you generally can get 2 different types of dessicated coconut. One without added sugar or sweetened or the non-sweetened version. I would opt for the latter0

make sure the coconut is unsweetened. But this looks really good. Coconut makes a great replacement for flour and taste sooo much better. And its better for you!0
