Linguine with Guacamole = pretty good! It is a little higher in calories, but I used 4 oz linguine instead of the 6 oz it calls for (2 oz is usually plenty for me when it comes to pasta) so it was under 400 for a single serving per the recipe thingee on here.

Also, I recently found (but haven't tried yet) a good looking recipe for chicken salad where you use avocado instead of the mayo. That sounds good to me. I could eat 4-5 avocados a day if I let myself. Love those things...0 -
I make what my kids call "Fiesta Salad" - 2 semi firm but ripe avacados diced - 1 can of black beans rinsed and drained - 1 c frozen corn - 2 diced roma tomatoes - 2 tsp lime juice - McCormick Guacamole seasoning. Mix it up and let it meld for an hour or so. Really good on Taco Salad.0

Avocado salas: Tomatoes, Onion & Avocado cut all up in bit size pieces mix with a little olive oil & lemon or lime juice (whichever you prefer). Put on top of grilled chicken with some brown rice, very yummy and filling.
I also add it to my turkey sandwiches instead of cheese, and hummus instead of dressing if I need to add a few more calories.0 -
Personally, I can't stand palta... It is one of the few foods that automatically triggers my gag reflex.
Though, I have heard that putting the seeds in shakes can help lower cholesterol.0 -
i read a recipe somewhere where you take an avocado peas and lemon and blend it into guacomole and its lower calories and fat anyone know the recipe?0

cut in half, discard seed, take out fruit, cut in cubes, mix with mustard vinaigrette and serve in shells...

Prob not the healthiest but...
Open faced Grilled Cheese with a fried egg, avacado slices, pepperoni and mozzarella cheese. Yummy.0 -
I just scoop out pieces and put it on sub sandwiches (instead of Mayo/dressing, etc).0

i love to put it in sandwiches, salads, tacos...0

I've eaten avocado mousse as dessert. I don't know what else was in it though, but it was tasty!
I usually eat it as sandiwch spread with pepper or in salads.0 -

I have recently taken to slicing it, then drizzle olive oil, lemon, sea salt, and pepper and eating as a side to a sandwich or something.0

I was just wondering the same thing (so I searched and found your post). I just cut up a few slices and had it on top of a really spicy turkey burger- it was great! It helped tone down the spicy-ness and added a light taste and creamy texture. I highly recommend having slices with a strong flavored meat like pork!0

Great thread! Can't wait to try many of the suggestions here.0

I use it as a spread on toast or sandwiches, cut it up and have it with a salad, or sometimes just dig in with a spoon.
I haven't tried this yet, but found it on Pinterest and thought it sounded good:

Someone else had a thread with the "Avocado Mousse" in it...i tried to make it...it was...different...
basically throw avocado innards in food processor with a tbsp or so of cocoa powder and sugar/honey/agave/sugar substitute to taste.0 -
I like it on my turkey burgers, or hamburgers for that matter. Also a salad with chick peas (drained and rinsed) halved grape tomatoes, diced cukes (I prefer the English ones) and feta cheese with a Greek Vinaigrette0

On a sandwich. Also it does wonderful things for your HAIR! Buy an avacado when it's ripe and wait for it to get soft. Spoon into. Bowl and make sure you mash it really well and add a drop or two of olive oil and mix well. Put mixture in hair and wrap hair in a hot towel for about an hour then wash a normal0

I love mine with some lime juice and I also eat a banana on the side. Try it; it is delicious!0

Cut in half with a little S & P.0

Ok, I have to ask..... Is avAcado the correct american spelling of avocado?
I see it on here (& in the food database) all the time, and it's very annoying as it's wrong (to me), however if it is right for you guys over that side of the world then I will just have to learn to accept it (kinda like the check/cheque thing, or color/colour etc )0 -
You can make homemade Japanese hand rolls with avocado. Get some roasted seaweed sheets press some sushi rice on it and a slice of avocado and roll it up into a cone shape and eat it plain like that or add raw tuna or salmon, it's like an easy sushi roll less work. It's low calorie and if homemade you control the size and calorie count of the avocado and amount of rice to use. Dip it in soy sauce and enjoy. I just learned to make them and I love them and it hits the spot.0

I recently had it as a mixed salsa. I used diced avocado, israeli couscous, black beans, corn and diced red bell pepper. Mix it together with some italian dressing, cilantro and lime. Eat it with pita chips.0
