Southwestern Chicken Salad Sandwiches

4 oz nonfat chream cheese product, softend
1/3 c. nonfat sour cream
2 T salsa
1/2 tsp ground cumin
1/4 tsp salt (optional)
1/4 tsp. ground red pepper
1 1/2 cups shredded cooked chicken
1/3 cup finely chopped sweet red pepper
1/3 cup minced green onions
8 slices wheat bread toasted
16 medium-size fresh spinach leaves
1 c. alfalfa sprouts (VERY OPTIONAL!! ) :sick:

Combine first 6 ingredients in a small bowl. Stir in chicken, sweet red pepper, and green onions. Spread mixture evenly over 4 slices of bread; top evenly w/spincach leaves. Place (OPTIONAL:sick: ) alfalfa sprouts evenly over spinach; top with remaining 4 bread slices. Yield: 4 servings (225 calories per serving)


These are great for bringing into work. :smile:

    I made this and it is very yummy! I put it on a toasted whole wheat mini bagel.

    Thanks for sharing. I'm always looking for mayo alternatives. Sounds yummy & very filling. I will probably put it in a LF/WW wrap.
