Quinoa Burrito

Quinoa, with black beans, sautéed corn, green peppers, onion and garlic...sprinkle with taco seasoning. Put in a wheat tortilla, stuffed with lettuce. So filling and a great alternative to a bean burrito.

Quinoa is a peruvian grain (sounds fancy) It is usually in the rice section of the grocery store. Has tons of protien. Kind of like couscous...good to mix into soups, make a pilaf, or stirfry.0

Quinoa is a delicious, high-protein seed that can be used in a lot of rice/grain recipes. It has double the protein of brown rice! I find mine in the health and organics section of my supermarket, but my Costco has it in 4-pound bags for a great deal!0 -

I don't think a place like Wal-Mart would carry Quinoa, I could be wrong though. All the times I've seen it, it's been at places like Whole Foods and Henry's (health food/organic friendly type stores). I'm not a fan but it is good for you.0 -

I've never tried quinoa in a taco before -- that sounds yummy! My favorite way to eat quinoa is in a bowl with chopped artichoke hearts (from a can, marinated is best but packed in water not oil!), fresh chopped basil and a little low-sodium chicken broth!0
