Crock Pot Recipes!!!

I recently discovered the crock pot and let me tell you...I am in love! It is so easy and everything I have tried has been delicious..and allowed for leftovers which is awesome!

I am looking for some interesting and fun recipes that you all maybe have...I've browsed recipe boards and such but am looking for your absolute favs. If you have something...please share...

I will give you the easiest, yet yummiest one I have made yet...

Chicken Cordon Bleu in the Slow Cooker
5-6 Chicken Breasts
1 cup milk
1 can condensed healthy request Cream of Chicken Soup
4 ounces sliced deli ham
4 ounces sliced low fat swiss cheese
1 box Stove Top Chicken Stuffing
2 tbsp Promise Light spread

Place chicken in bottom of crock evenly. Mix soup and milk together and pour half over chicken. Lay ham and then cheese overtop of chicken and sauce and then pour reamining sauce overtop of the entire mixture. Pour dry stuffing mix evenly on top and drizzle melted butter spread over stuffing. Cook on low for 5-6 hours.

    They call it Crock Pot Soup, I think of it as more of a Chicken Chili

    Can of Rotel
    Can of Corn
    Can of Black Beans (drained and rinse)
    2 frozen chicken breast
    8 oz cream cheese (I use the 1/3 less fat)
    1 Packet Dry Ranch Dressing
    1 Tablespoon Cumin
    1 Teaspoon onion powder
    1 Teaspoon chili powder

    Put all ingredients in crock pot and cook 6-8 hours.
    Shred chicken, and enjoy!!

    If serving 4 ppl, it comes to approx 380 calories a serving.

    And another. I just made this this week and it was so yum:-)
    Greek Chicken and Couscous

    16 oz Chicken Breast (cubed into about 1/2 inch pieces)
    1 15 ox can of Diced Tomatoes with Basil, Garlic and Onion
    1 Box Toasted Pine Nut Couscous
    3/4 cup water

    Put Chicken in crockpot. Add tomoatoes and water. Cook on low for 6 hours. Stir in Couscous, cover and let sit for 5 minutes.

    Add Kalamata Olives and Feta to taste/garnish

    I just made this about an hour ago:

    Turkey Chili

    1 red Bell Pepper
    1 green Bell Pepper
    1 medium Red Onion
    4-6 cloves of garlic (pressed)
    1lb lean ground Turkey
    1 can kidney beans
    1 can pinto beans
    1 can black beans
    1 can diced tomatoes
    1 can tomato paste
    1 tsp salt
    1 tsp pepper
    1 1/2 tsp cayenne pepper
    1 1/2 tsp cumin
    1 cup water

    Brown the turkey, onions & garlic in a pan. Then add the mixture plus the rest of the ingredients in the crockpot for 4 hours on high or 6 hours on low.

    Super easy, filling and (best of all) healthy!

    8 servings: 274 cal, 34.6g carbs, 1083mg sodium
    6 servings: 365 cal, 46.1g carbs, 1445mg sodium

    Made this over the past weekend. Quick, easy and tasty.

    4 frozen chicken breasts
    20 ounce can of pineapple chunks
    1/4 cup of low sodium soy sauce
    1 tsp crushed red peppers(Optional)

    Cook on low for 3 to 4 hours or high for 2. Serve over rice, noodles or great cut up in salad.

    BUMP...bump/ bump I love my crockpot. It's mostly my winter cooking. Makes house smell fantastic! Oh and if you haven't heard yet there are crock pot liners...great inventions like plastic bags that line the pot. No clean up....he he he :)

    enjoy!

    best to not put salt or pepper in cause it gets stronger the next day. I let each person salt/pepper as needed.

    Ingredients:

    1/2 cup quinoa
    3/4 cup uncooked small red lentils (masoor dhal)
    Optional: 1 Tbsp olive oil
    2 large carrots
    2 stalks celery
    1 small head cauliflower OR 2 medium potatoes or OR 1 med. zucchini OR 1 small butternut squash
    1 bay leaf
    2 inch piece cinnamon stick
    2 thin slices fresh ginger

    1/2 jalapeno pepper, seeded
    6 cups water or unsalted soup stock
    1/2 tsp gr cumin
    1/2 tsp gr fennel seed
    1/2 tsp turmeric
    1/2 tsp paprika
    1/2 tsp gr coriander
    1/2 tsp dried thyme leaf or 1 sprig fresh
    1 tsp dried basil or 1 Tbsp minced fresh
    1/4 tsp dried rosemary leaves or 1 sprig fresh
    1/2 tsp salt or to taste and fresh ground black pepper
    4 Tbsp minced fresh herbs: parsley, cilantro or basil
    2 cups chopped fresh greens: kale, chard, or spinach
    More Heat: Add 1/2 - 1 tsp green curry paste OR 1/4 tsp cayenne powder

    Crockpot Directions:


    Rinse the quinoa and red lentils in a bowl or pan, then drain into a colander
    Peel the carrots, slice lengthwise, then slice in thin pieces
    Wash and trim the celery stalks, then slice crosswise in thin pieces
    Break or cut the cauliflower into large chunks - these will break up into smaller pieces as they cook
    Combine olive oil, quinoa, lentils, herbs & spices, fresh ginger and jalapeno in the crockpot
    Add the vegetables, except for the optional greens, and cover with the 6 cups water
    Cover and cook on low for 6 hours or more if needed
    20 minutes before serving, turn the heat up to high and stir in optional greens
    Just before serving, add the minced fresh parsley, basil or cilantro, salt & pepper, and serve, removing the ginger slices, bay leaves, cinnamon stick, as you come across them

    all these recipes sound so good i have a small crock pot i put in a chicken breast garlic salt and pepper than i add a potato and later some vegs simple and light but i like it low on cal

    I love love love my Crock-pot!

    One of my favorite and easiest things to make is simply cooking chicken breasts with salsa verde in it. Just put in 4-6 chicken breast and enough salsa to cover the chicken, cook on low for 7-8 hours and that's it! I shred it with a fork and us for tacos, enchiladas or eat with beans and rice.

    One cup of this ( for lunch) has really low calories... but beware if you're watching sodium. The sodium is extremely high. It is very yummy if not!!

    Love my crockpot, especially in winter. Check Canadian Living's website ( recipes online) for some great recipes. Latest new one I tried was yummy butter chicken. It made the house smell fantastic, and made enough sauce to put some in the freezer for another time.

    I make this all the time and it's great on tortillas too. It's already on my menu for next week!

    I've made this a couple of times and it is delish! In fact, it's cooking right now for tonight's dinner!


    Mexican Crockpot Creamy Chicken

    Ingredients:
    20 oz. Boneless Skinless Chicken Breasts (this is about 5 breasts, I put mine in frozen)
    1/2 cup of salsa
    1 bag frozen sweet corn
    1 can of black beans, drained and rinsed
    1 can of Rotel Diced Tomatoes with Green Chilies
    Chili Powder (to taste)
    Salt & Pepper (to taste)
    1/2 block of cream cheese (I use 1/3 fat free)

    Directions:
    Put chicken in crock pot and cover with all ingredients except for cream cheese.
    Add in chili powder and S & P to taste. I sprinkle it all on the top and add more later if needed.
    Cook for 3-4 hours on high, 7-8 hours on low.
    Shred the chicken and mix it all in along with the cream cheese until melted. Let cook for another 15-20 minutes until heated through.
    Serve over rice or in tortillas as tacos/burritos.
    Top with some shredded lettuce, diced tomatoes, onion.

    Makes 14 – ½ cup servings.

    I recently tweaked this recipe by using 1 c. of salsa (instead of 1/2 c.), 2 cans of black beans (instead of 1). And I usually add a bit more cream cheese than what the recipe calls for.
