    I recently discovered the crock pot and let me tell you...I am in love! It is so easy and everything I have tried has been delicious..and allowed for leftovers which is awesome!

    I am looking for some interesting and fun recipes that you all maybe have...I've browsed recipe boards and such but am looking for your absolute favs. If you have something...please share...

    I will give you the easiest, yet yummiest one I have made yet...

    Chicken Cordon Bleu in the Slow Cooker
    5-6 Chicken Breasts
    1 cup milk
    1 can condensed healthy request Cream of Chicken Soup
    4 ounces sliced deli ham
    4 ounces sliced low fat swiss cheese
    1 box Stove Top Chicken Stuffing
    2 tbsp Promise Light spread

    Place chicken in bottom of crock evenly. Mix soup and milk together and pour half over chicken. Lay ham and then cheese overtop of chicken and sauce and then pour reamining sauce overtop of the entire mixture. Pour dry stuffing mix evenly on top and drizzle melted butter spread over stuffing. Cook on low for 5-6 hours.

    I like the crockpot too. A really easy one is "Salsa Chicken" not sure if it's been shared already, but it's just a few chicken breasts with a jar of salsa, cooked on low. Shred the chicken and use for tacos, burritos, salads. Add beans, corn, whatever, add chciken broth and make a tortilla soup. It's basic but tasty...

    Bumping -- until I get home from work and lookup all my breakfast cereal recipes!!

    Mostly I wing it...


    2 cups grains (I am gluten free so I use quinoa flakes, millet, amaranth, polenta, gf oats -- or a combination of all)
    1-2 cups vanilla almond breeze ( I used to add less and stir in 1 cup of fage greek yogurt but i'm a dairyfree mission now)
    2-3 cups water (or however much until the grains are covered
    I add 2-3 tbs stevia (use what you like) (optional)
    1-2 tsp cinnamon (optional)
    1-2 tsp vanilla extrat (optional)
    cook on low or warm over night...

    Optional Stir-Ins:
    pumpkin puree + pumpkin pie spice
    fage greek yogurt + sf cheesecake pudding mix (1-2 tbs)

    I put it in little individual containers so I can grab and nuke all week.
    I like to add things like walnuts, chia seeds, fruit

    PS I'm winging it from memorey here... normaly just pile it all in and taste it once in awhile and add wha'ts missing :)

    I don't typically "bump" but I am on this thread. I have been trying to get my family to eat better, but neither my husband or myself has the time to cook! I think this will seriously help some of our problems.!!! I'm also excited about the crock pot liners!! :p

    Crockpot Turkey Pasta Sauce Recipe

    Ingredients

    2 tablespoons olive oil
    2 carrots, peeled, finely chopped
    2 celery stalks, finely chopped
    2 medium onions, finely chopped
    2 cloves garlic, minced
    1 pound ground turkey or chicken
    1/2 cup red wine
    1 teaspoon dried thyme
    1 bay leaf
    3 cups strained tomatoes, tomato sauce, or crushed tomatoes
    salt and pepper, to taste
    a few sprigs fresh basil (reserve a few leaves for garnish)
    Directions

    Heat oil in a large saute pan on medium. Add carrots, celery, onion and garlic. Saute until onions are translucent, about 3-4 minutes.
    Add ground turkey and cook until no longer pink, breaking up pieces.
    Add red wine and continue cooking until there is no more liquid in the pan.
    Spoon meat into crockpot. Add thyme, bay leaf, tomatoes, salt and pepper.
    Cook for 4-6 hours.
    Add fresh basil sprigs half an hour before serving.
    Serve with your favorite cooked pasta.

    Slow Cooker Baked Potato Soup Ingredients:

    5 pounds russet potatoes, washed but NOT peeled. Diced into 1/2 inch(ish) cubes
    1 medium/large yellow onion, diced
    10 cloves of garlic, minced (if you use jarred, it's a 5 teaspoon equivalent)
    64 ounces (8 cups) chicken stock or broth
    16 oz cream cheese, softened (I use low fat)
    1 tablespoon seasoned salt (I use Aunt Cora's Soulful Seasoning)
    optional garnishes: crumbled bacon, shredded cheese, green onions


    Add potatoes, onion, garlic, seasoning, and chicken stock to slow cooker.
    Cook on high for 6 hours or low for 10 hours.
    Add the softened cream cheese and puree soup with an immersion blender until the cheese is incorporated and about half the soup is blended. (Alternately you could remove half the soup and the cream cheese to an upright blender, then re-incorporate).
    Stir well, top with your choice of garnishes & enjoy!


    Yields about 10-12 servings.



    I love my crockpot and use it 3-4 days during the week! I get recipes that are healthier from http://www.eatingwell.com/recipes_menus/recipe_slideshows/cheap_recipes_for_a_crock_pot?slide=2#leaderboardad...definitely worth checking out! :)

    My friends and family enjoy "swiss steak" in the crock pot.

    I use an outside round marinating steak (usually two), place in bottom of pot, slice onions, red, orange, green peppers, I also add zucchini, then sprinkle with a few tsps of flour (helps to thicken the sauce after), then take a can of tomato sauce and pour over top. I usually cook it on low for about 6 hrs....I think...LOL. I sometimes use roma tomatoes and chop them into it as well if I have them.

    Love this post! 2 lb roast and can of rotel, do this all the time for tacos, love it. If your really feeling frisky put a can of chipotle in ancho sauce in instead of the rotel, whew hot mamma!!!

    I love my crockpot! Cook in it at least three times a week if not more.
    I have to make all our food from scratch...no premade items or season packets etc, because my son has food allergies, the main one being soy.
    Some of our favorites are our Sunday Roast...so yummy and it just falls apart...I make our gravy from the drippings in the pot. The best ever!
    We also like chicken and dumplings in the slow cooker.
    Plus my own Chicken cacciatore recipe, which the kids love!
    My main seasoning ingredients in most recipes are onion, bullion (either chicken or beef sometimes both), garlic, celery salt, and season salt or alpine touch.

    You can throw anything into the crockpot and it comes out great. Just watch your seasonings, they intensify in the slow cooker so you do not need as much.
