Anybody have a really good, healthy, banana bread recipe? Lost the last one I had and really, really loved it!!! Thanks!!

    Banana Bread

    4-5 bananas
    1 cup sugar
    1/2 cup applesauce
    1 tsp. vanilla
    2 eggs (or liquid substitute)
    1 tsp. baking soda
    1 TBSP. baking powder
    1 tsp. salt
    2 cups flour
    1 tsp. cinnamon
    1/2 1 cup nuts (optional)

    Preheat oven to 350

    Place bananas in a large bowl and mash with mixer.

    Stir in sugar and let stand for 15 minutes.

    Add applesauce and eggs, mix well.

    Add remaining ingredients and mix well.

    Pour into loaf pan coated with Pam.

    Bake 3 to 45 minutes or until top is golden brown and a toothpick inserted into center of loaf comes out clean.

    Mine is very similar to this, but I use egg whites, and I add a little bit of flax or wheat germ. Good luck!

    What if you replace the flower with whole grain? and Sugar with Splenda ? I am curious now!!

    I used the same recipe except i used sugar substitute and 3/4 cups banana protein powder and 1 cup flour. It didn't seem as fluffy :(

    I make a grain free version.
    I use about 6 ripe bananas
    3 eggs
    .75 cup buckwheat flour
    .25 cup coconut flour
    .25 cup natvia (stevia / truvia) natural sweetener
    4 g vanilla essence
    tsp cinnamon
    2 tsp coconut oil.
    Mix with a blender, pour it into lined loaf tins and bake till golden and springy. makes 2 small loaves . 16 serves.
    97 cals per serve, 19 carbs, 2 fat, 2 protein, 10 sugar, 198 potassium.
