No wheat spiced chestnut pancake stack (pic)

Ok so I just randomly made up the recipe for these this morning for my breakfast as I have chestnut puree to use up

They taste delicious, I love anything that reminds me of Christmas and these did just that

Ingredients:

1 medium egg white
70g Chestnut puree ( I used the merchant gourmet brand)
20g rice flour, or flour of choice
60ml skimmed milk
1-2tsp of ground mixed spices
1/2 tsp cinnamon
1sp baking powder
4g coconut oil to cook

Mix all ingredients, except the oil, in a bowl to a smooth batter. I left mine for about 30 mins as I got ready

Heat up the coconut oil in a large pan then turn the heat down to a mid range temp (I find this prevents cooking too quick)

Stack up with sliced apple, Fage 0%, agave nectar and sprinkle of cinnamon to make it look pretty!

The value of the pancake mix and oil came too

Blob on the mix into whatever size you want and turn when cooked on one side
