Sweet Potato meals ?

            I wrap mine in foil and grill them. I leave them on the grill for about 45 minutes. They are sweet and delicious when they come off the grill. When I cut it open, I put ICBINB and a sprinkle of nutmeg. Yum!!0

            This makes a HUGE bowl of deliciousness, and split four ways it's about 350 calories a serving.

 I also like to cut them up and add to crock pot recipes like stew, soups, and pot roast.0

            Bake, cut in half and eat with a spoon.. its yummy. don't even need all the stuff you put on regular potatoes. Also try sweet potato fries (homemade) its pretty good.0

            I came across this idea from a site about strength training and plan to try it soon as it fast and easy (I hate cooking). She said she cuts up a sweet potato and sprinkles cinnamon on it, then zaps it in the microwave for 5 mins.0

            Kale and goat cheese stuffed baked sweet potatoes! Microwave the potato for 5-7 mins until it's soft, cut it in half and scoop out & mash the inside, mix chopped kale and goat cheese with mash, then re-stuff the potato and bake it for 15 minutes!0

            Just rediscovering sweet potatoes after hating them as a kid. Plain jacket baked ones are excellent, especially with some oily fish like mackerel to give that bit of moisture to the meal!0
