I REALLY need to make these. WOW. Anyone know the best place to get the Wonton wrappers?based off the of the Cupcake Lasagna recipe originally posted by sheila0321
24 wonton wrappers
1lb 96/4 extra lean ground beef
1/4 cup taco seasoning
1 1/4 cup pace picante salsa (pick your heat level)
2 cups fat free shredded cheddar cheese
Brown ground beef, then add 2/3 cup water and taco seasoning;
stir together and let simmer over medium heat for 5 minutes.
Lightly spray each 12 cup muffin tin with pam.
Layer one wonton wrapper in each cup.
Put about one tablespoon of salsa on top of each wrapper.
Sprinkle on a tablespoon of cheese, the top with about a tablespoon of meat.
Layer in another wonton wrapper, salsa, cheese, meat, then finish with more cheese.
Bake at 375 for 25 minutes, let cool about 5 minutes then just pop out and enjoy with a salad.
They are 160 calories, 2g of fat and 22g protien each. Makes 12.0 -

You can get won ton wrappers in the bagged salad/tofu area of grocery stores. I got mine at WalMart.0 -

I saw taco cupcakes in someone's diary,
so I did a Google search.
This is what I came up with:
(I tweaked it a little)
Preheat oven to 375.
Brown the meat in a skillet and drain off fat. Return the meat to the skillet, add the taco seasoning, and a little water. Mix and simmer for 5 minutes, until water is absorbed.
Wipe 18 regular muffin pan cups with olive oil. Place two wonton wrappers in each muffin cup,
star shaped. (offset) Divide the taco meat between muffin cups. Add black beans (1 tbsp per).
Then add black olives. (4 slices per cupcake) Sprinkle cheese (1/2 oz) over the cupcakes.
Bake at 375 for 20 minutes, or until cheese is bubbly. Top with your favorite taco toppings.
Makes 18 cupcakes
