I am vegetarian but do lots of vegan stuff to. Here are a few vegan dishes that are really yummy but often people forget; vegan seems to trigger soy products and lentils and beans...
we love making stir fries with different veggies and sauces
spaghetti squash
zucchini lasagna with soy cheeses etc.
quinoa!!!! I love quinoa stuffed acorn squash or peppers, quinoa risotto...
regular risotto
tacos/fajitas
sweet potato fries
fresh fruit salads....
Once you start trying you are likely to discover there are many choices!!! I have the Veganomicon cook book- I like it. It may not be the best to start with though. Good luck!0 -
I usually have meals that look like this:
Breakfast:
Tea with Almond Milk
Ezekiel toast with peanut butter
Apple
Lunch:
All bean chili, or tofu scramble with spices with salsa
Mock Chicken salad made with Vegan Mayonaise and Gardein Chik'n strips
Any of the above with a large fresh salad
Dinner:
Flat out wrap with marinara and vegan cheese
or a wrap with spinach, nutritional yeast, tomatoes, cucumbers hummus, avocado
Snacks:
I eat a lot of hummus and veggies0 -
