Parmesan Crusted Chicken

I tried this recipe a few nights ago. So good!
1- 1 1/4 pounds of Chicken Tenders or slice chicken breasts into 1 inch thick strips
1/4 cup mayonnaise
1/2 cup panko bread crumbs, I used Italian.
1/2 cup grated parmesan cheese
Put the chicken in a bowl with the mayo, use your hands and mush it all together Make sure to coat each piece.
Mix bread crumbs and parmesan and roll the chicken in it coating each side. Place on a baking sheet that has been sprayed with pam.
Bake for 8 minutes at 425, then turn to broil for 2 to 3 minutes till it looks crusty on top.
So easy and so good. My whole family liked it.
3 oz is 207 calories.

so good! I make this same thing but without the mayo.. I use a milk egg mixture and sometimes even just water.. just enough to get the panko to stick and it usually works great0

I did this with eggplant this weekend, except I used egg wash to stick and ground pork rinds instead of bread crumbs (I've been experimenting with low carb recipes lately to see what works for me and what doesn't), baked until brown. It was pretty tasty plain, or with pasta sauce and mozz sprinkled on top0
