Sounds good! Like the idea of portion control. There is a recipe on here to do it with meatloaf in the muffin tins, but I never thought about doing it with pasta.
I guess you can make anything in a muffin tin! I make meatloaf in muffin tins now as a rule. They are not only great for portion control, but if you have some left over you can freeze them for another (quick) meal.
I always make meatloaf in a muffin tin....cooks faster and great for portion control and freezing leftovers. I'm thinking these mac&cheese muffins would be a great side dish to that! We always had mac & cheese on the side of meatloaf as a kid.
Added bonus: my boyfriend will find that I do have uses for my multiple muffin tins and there is no reason to complain. :-)

I'm going to have to dig out the muffin tins. Great ideas about portions here!

I defeated the portion control theme by using four custard cups instead of 12 holes in a muffin tin. I used coconut oil instead of butter, and I planned to use whole eggs instead of just the whites . . . but I forgot the eggs entirely.
I also used beet greens instead of spinach, and some garlic that I had roasted with some beets I pickled yesterday. The result was a mixture with a sickly Peptobismol-color when I put it in the oven. Luckily, the color faded with the heat. It looked just fine hot and tasted great!
Ready to go into the oven.
Baked and plated.
With Trader Joe's High Fiber Penne (each of four servings):
Calories: 400
Carbs: 37 g
Fat: 19 g
Protein: 20 g
Saturated Fat: 11 g
Fiber: 6 g

This sounds awesome. I'd probably have to make the larger muffins instead of the smaller cupcakes since I can't turn down mac n cheese and I'd end up eating 2!!0
