It might be a stupid question, but I cant get my head around what we are measuriung carbs, fat and protein by. Is it grams?

Yes, grams. These three are known as macro nutrients, as they are usually in amounts >1g.
Micronutrients, like vitamins and minerals, are usually in amounts <1g, and are measured in mg (milligrams).0
