Roasted Beets With Feta

Total Time: 45 min.Prep10 min. Cook35 min.
Yield:4 servings .Level:Easy. .

.Directions


Peel 4 medium beets and cut into 1/2-inch pieces. Toss with 1 tablespoon olive oil, 1 teaspoon salt, and pepper to taste on a baking sheet. Roast at 450 degrees F, stirring once or twice, until tender, 35 minutes. Transfer to a bowl; toss with 4 chopped scallions and 2 teaspoons lemon juice. Top with crumbled feta.

    No, I hadn't tried that, but the combination of both of these together are melt in your mouth good.

    I have never roasted a beet. I might try this recipe. But are they good just plain roasted?

    Honestly never had them "just" plain. I always have olive oil, salt, and pepper.

    That does sound good with Brussels sprouts. Might have to try that and top it with vinaigrette reduction.

    I add fresh sage to mine. It's super yummy! Actually, I haven't made this dish in a while. I ate it SO much when I discovered it that I burned myself out on beets. LOL!.

    Oops, I wasn't clear--by plain I meant with just olive oil and salt and pepper. I was a little unsure of the lemon juice, etc.

    i love roasted beets but have never made them for myself. Only bought canned. Thanks for the recipe. I usually order whenever I see them on a menu at a restaraunt. Love beet salads.

    Beets are delicious just plain roasted by themselves. I normally take a beet scrub it down, cut it into qtrs and wrap up in foil with a little drizzle of olive oil. I roast it at 375, and check it around 25mins. Then I check every 5 minutes until it's soft. Sometimes I just eat it like this. Sometimes I sprinkle with salt and pepper and balsamic vinegar, or slice and throw in a salad. But they are delicious just plain and by themselves also!
