Spinach Burgers (Pinterest)

I teach high school Culinary Arts and Food & Nutrition and I'm always looking for new recipes for my students to try. Today we did a Pinterest lab and made Spinach Burgers (our healthy option). The kids gobbled them up and they were absolutely delicious! Whomever came up with this recipe is a genius!
PS. They do have a bit of a kick to them, but you could easily cut back on the red pepper or omit completely.
Spinach Burgers
10 oz thawed and well drained frozen spinach
2 egg whites
1 egg
1/4 c diced onion
1/2 c lowfat shredded cheddar cheese
1/2 c bread crumbs
1 tsp red pepper flakes
1 tsp salt
1/2 tsp garlic powder
Mix all ingredients well in a bowl. Form into 4 burger sized patties, or you can make smaller spinach balls. Heat a non-stick skillet over medium high heat and spray with cooking spray. Cook for 4-6 minutes on each side until browned. Serve on your choice of bread product, or eat them "naked".

Tried this tonight on a sandwich thin, pretty good! Next time I will use a little less garlic powder though. I added the nutritional information (used the recipe calculator!) to the database under the name Spinach Burgers (Pinterest). Only 130 calories per patty!

what can i sub for the bread crumbs and cheese?
do you have allergies? when I make the cauliflower crust pizza the original recipe I found called for cheese (a lot of cheese) to help bind it together, instead I use vital wheat gluten. If you have gluten allergy obviously this would not be ok for you. But it also loads in a lot of protein! For bread crumbs i'm not sure what you could use. I normally use brown rice "bread" crumbs just because I like the texture better.0 -

I made these yesterday and they were pretty amazing. They tasted great and were light but you actually felt like you ate something really satisfying. Thanks so much for posting this!0

These were so delicious! I didn't have cheddar cheese so I tried it with Cottage cheese and instead of Garlic powder I used 2 cloves of Garlic. Also I used black pepper instead of the flakes. It was so juicy looking I didn't think it would stick together but it did!0
