Cabbage Enchiladas

Preheat oven to 350
*Specific Ingredients i used*
Great Value - Boneless Skinless Frozen Chicken Breast, 16 oz
Great Value (Walmart) - Fat Free Sour Cream ( Corrected), 16 tbsp
Fresh - Jalapeno, 28 g (one jalapeno)
Fresh Raw (Nutritiondata.Com) - Cilantro, 1 oz
Generic - Yellow Onion 28 g, 56 g
Generic - Bell Pepper, Green, Raw (Taken From Nutritiondata.Com), 2 ounce (28 g)
Great Value - Shredded Low-Moisture Part-Skim Mozarella Cheese 32 oz, 1 cup (28g)
Cabbage Leaf - Raw, 10 medium leaf
*for enchiladas*
Boil and shred chicken- set aside 1 cup of broth
sautee- onion and pepper & mix with shredded chicken
boil cabbage leaves until mostly soft (2-3mins) remove leaves and pat dry
Scoop meat onion and pepper mixture into cabbage leaves
top with cheese and cilantro(save some cheese for topping)
*sauce*
dice jalapeno and sautee in sauce pan
add sour cream & broth to pan
mix well
let simmer on low heat until thickened
*DO NOT BRING TO BOIL*
pour half of sauce into serving dish
place all of 'enchiladas' on top of sauce
pour remaining sauce over enchiladas
top with remaining cheese
