Lots of good ideas here.
I usually just make it in my rice cooker, using turkey broth instead of water. I add my seasoning to the broth so it cooks it in (garlic powder is great). Eat it just like you would rice. Turns out great!0 -
I love macaroni & cheese, but well, it's not exactly healthy. Here's a recipe I found for Quinoa Mac & Cheese - I use the prewashed kind, and tried it in the rice cooker, but it didn't work so well. I find it cooks best on the stove.

hubby calls it cheesy quinoa, because there's no macaroni. I pared it down to the basics - cup of 1% milk, 2 eggs, box of quinoa, and a small block of low-fat pepperjack cheese. Add a little sea salt and voila! Delicious!0 -
This Quinoa Gratin is really good. Not too much cheese and pretty tasty.
