Banana Oatmeal cookies

I tweeked them a little and added 2 tbsp. Peanut Butter, an extra banana, used 2 1/2 cups oats, and used 3/4 cup applesauce instead of a real apple. So my calories per cookie were about 68cal. I also only got 25 cookies out of my batch using a tablespoon. They are pretty good, but not a crunchy cookie like my husband likes!

Does stevia still have that nasty aftertaste when you use it in baking? I can't get myself to put it in tea or coffee, but I love to bake me some cookies...0

I have tried baking oatmeal and if you want less cookie and more cake like, you can add an egg and teaspoon of baking powder. You can also put in nuts, dried cranberries, cinnamon, etc. you get the idea. I like honey instead of sugar or sweetener. Great as a healthier snack.0

I tried these yesterday and I have to say they were not what I was expecting. I think that it would have been better if I used only about 1 1/2 cups of oatmeal. The 2 cups were too much.0
