    My husband has this little thing that he can do where he sticks a green bean up his nose and then pulls it out of his ear. This trick KILLS at 8 year old birthday parties! :laugh:

    Hide them in other foods -- vegetables in lasagna or spaghetti sauce.
    Add mango lime salsa (different brands vary widely in caloric content; Stonewall kitchen has one for about 15 calories in a spicy tablespoonful)
    Mix unusual ones into salads.
    Sprinkle with grated Romano cheese or some other cheese that fits into your plan.

    I lOVE veggies....we just did 2 "new" things the last week or so that were DELISH.

    Use cauliflower as "mashed potatoes"...we just steamed it, smashed it, added some real butter, a couple tablespoons 1/2 and 1/2, salt and pepper. Yummy.

    Mother's Day dh and I grated brussel sprouts, sauteed them in a bit of coconut oil with salt/pepper. YUM!

    GRILLED zucchini is one of my all-time-favorites. Not the baseball bat size ones, however. :)
    Use the smaller 6-8" ones, slice into 1/2" slices long ways. Spray with olive oil, throw on the grill. 3 minutes or so, turn--add parmesan cheese and fresh cracked pepper. Grill an add'tl 2 or 3 minutes. Remove and eat.

    Don't forget QUICHE or frittata! Yum. Excellent source of protein with the eggs...and wonderful nutrients with the veggies!

    McCormick makes a spice called "Perfect Pinch" They have a couple different styles and this adds seasonings to the veggies that really gives them variety

    HAHAHA LOL... I have a dirty mind and can't stop laughing because I had no idea at first that this was a serious question.


    On a serious note: I love roasted or grilled vegetables. Later you can use them in salads or sprinkle with some nice aged balsamic vinegar and eat them cold too.

    I love LOVE cauliflower poppers. Coat with olive oil and a little salt and bake till crispy. YUM!

    I had a really yummy fresh veggie pizza the other night. It was just crescent roll dough rolled out and baked flat on a baking sheet. Then you spread a mixture of cream cheese and sour cream mixed with ranch dip and then top it with any kind of fresh veggies. This one had carrots, broccoli, red pepper, cucumbers, zucchini. It was fantastic.

    I did not read everybody's response, but I am pretty much 80 percent vegetarian so I am always looking for ways to spice up vegetables.

    1-Hot sauce! This stuff makes everything better, including vegetables.
    2-People mentioned cauliflower poppers/mashed, but you can also grate it and turn it into rice. Then make a vegetable fried 'rice.' Low carb and low calorie.
    3-Roast them and then blend them into a spread. If you can have guacamole, why can't you have a pumpkin puree spread or a roasted eggplant spread? The possibilities are endless!
    4-Cooking vegetables into a savory-style oatmeal is a great way to conceal its flavor. For an Asian style, top off your oatmeal with an egg, reduced sodium soy sauce, and some sesame oil.
    5-Blend raw vegetables and fruit into a powerhouse, green smoothie. Refreshing for the summer weather.
    6-Baked yam/sweet potato fries.
    7-Pickle them. It is so easy to make your own sauerkraut or kimchi.
    8-Make a vegetable patty using whole wheat bread/egg as a binder.

    Yeah, I can stick my hand up and say, I could only think of silly stuff! Glad I am not the only one.

    Now to read the rest of the replies, to see if I get any ideas.
