Turkey Meatloaf Muffins
1 package 99% fat free ground turkey
1 medium onion
1 medium red bell pepper
1 large zucchini
2 egg whites
½ tsp Onion powder
Black pepper
6 tbsp Ketchup
½ cup oatmeal
¼ cup Italian breadcrumbs
2 tsp Worcestershire Sauce
Preheat oven to 400
Cut up and sauté veggies until they are soft, mix veggies, turkey, egg whites, 4 tbsp. ketchup, black pepper, onion powder, oatmeal, and breadcrumbs in a large bowl. Divide between 12 muffin cups (make sure to spray pan with PAM).
Mix 2tbsp ketchup and Worcestershire Sauce in a small bowl and brush over the top of muffins for a glaze. Bake for about 25 mins and enjoy!

Found the recipe on Cooking Light, made even lighter by using only one lb of extra lean ground beef and egg whites only.
Cooking spray
1 cup finely chopped onion
1/2 cup finely chopped carrot
1 tsp oregano
2 garlic cloves, minced
1 cup ketchup, divided
1 lb extra lean ground beef (original recipe calls for 1 and 1/2 lb)
1 cup finely crushed fat free saltine crackers (about 20)
2 tbsp prepared mustard
1 tsp Worcestershire sauce
1/4 tsp ground black pepper
6 tbsp egg whites only (original recipe calls for 2 large eggs)
Preheat oven to 350.
Heat a nonstick skillet with a little bit of cooking spray over med-high heat. Add chopped onion, carrot, dried oregano, and minced garlic. Sauté 2 minutes. Cool.
Combine onion mixture, 1/2 cup ketchup, and the remaining ingredients in a large bowl.
Spoon the meat mixture into 12 muffin cups coated with cooking spray. Top each with 2 tsp ketchup. Bake at 350 for 25 minutes or until a thermometer registers 160. Let stand 5 minutes.
Each serving is 2 muffins. Original recipe was 276 calories, 8.6g fat, 28.7g protein
My version is 176 calories, 3g fat, 10g protein
Please remember to use a tiny square of aluminum foil to make cleanup easier and keep the muffins together a little more. I usually do, but this time I forgot.0 -
Don't forget the icing
I like to use a cauliflower carrot mash on top for a serving of veggies
Why would you rather have 10g of protein than 28 g?0 -

I'd like to give this a try as well. I'm fairly amateur at the whole cooking thing though so does this generally get served with anything else as a side dish? If so, any ideas, or is this a stand alone meal?
