Heres one i can throw out there.
chicken breast cooked in salsa (homemade or store) in a ziplock steamer bag, then when done topped with goat cheese.

One of my favorites is Chicken Salad made with chicken breasts, onion, celery, and mayo. Cut a tomato into a "flower wedge" and place the chicken salad on top. You can also put it on top of lettuce. You can use tuna as well ( white, Albacore, no oil)
Stewed Tomatoes with butter, garlic powder, cumin, chili powder, salt and pepper.

There are Adkin's approved low carb wraps available that you could fill with meat/fish and veggies. Or use large lettuce or greens leaves as wraps instead of bread.
A salad with plenty of leafy greens, veggies, and cheese, eggs, meat, fish, seeds and/or nuts is a good healthy low carb option.
Omelet's are pretty easy to cook or reheat if you have a microwave.
Soup or stew is also a good option. Make a big batch with plenty of meat and veggies and you have lunch for several days.
Or, what I find easiest for lunch is leftovers!! Assuming you have a low carb dinner, just make a little extra and tomorrow's lunch is taken care of.0 -

I hope this thread gets more action... this is an awesome question!
One of my favorites is to heat up my George Foreman grill in the morning and cook a serving of salmon (Costco sells these perfectly portioned peices, frozen, individually wrapped). I'll grill him up, let it cool, put it in a baggie... Then I'll make an awesome salad with spring mix, spinach, diced carrots, celery and sweet mini bell peppers. I'll bring whatever kinda salad dressing with me that I want and wala!!!! awesome salmon salad.
I'll do that same thing with chicken...
But it's very low in carbs, lots of vitamins because of the vege's, and good in protien. I know people are probably tired of hearing "just eat a salad"... but with all the different dressings and add-on's - it's not a bad choice for me.0 -
yes...I hope this gets lots of action too!! I love the ziploc steamer bags for work. they are great. Im going to try the chicken salad lettuce wrap for sure... i also love a good Tuna steak..mmmm...just salt and pepper cooked medium is so yummy.0

Ohh low carb is my preferred method of eating so this topic is great!!! One of my favorite standby meals is scrambled egg BLT"S. I make the eggs (can even be microwaved if you're in a hurry) then use a few large lettuce leaves, add the turkey bacon, a little chopped tomato and a tiny dab of lite mayo and even cheese depending on my calories for the day. Perfect for easy on the go food as well!0

I love L.C. I have so many outstanding recipies ,when I have dinner guests they have no clue they are eating "diet" food ...Do you do "oopsies"? I make rolls and flatbread....use for sandwhiches and burgers and such...LC has come a long way:)0

Yesterday I made a yummy chicken salad (btw...cooked chicken shredds beautifully in a kitchen aid mixer!
Chicken (i used 8 tenders boiled in chicken broth with garlic added)
1 green apple
1/2 cup pecans
green onions
mayo (to your taste, I like mine creamy)
sour cream (1 big spoonfull)
about a tsp of each: dill, taragon, celery salt
I ate it on salad greens...mmmm0 -

I make soup to take to work most days. My favourites at the moment are Roasted Red Pepper and Tomato, Spicy Lentil and Carrot and Coriander. They freeze well too so you don't have to have the same flavour every day!0

Chicken shish-kabobs (however you spell it):
1-2 Chicken Breast (no skin/no bone)
1 Red/Green/Yellow Bell Pepper
1 Pack of Baby Bell Mushrooms
1/2 Onion
1/4 teaspoon of meat Tenderizer
1/2 teaspoon of dried oregano
1/2 teaspoon of steak seasoning or Mr. Dash
1-4 shish-kabob sticks (depends on amount you are preparing)
Cut chicken breast, pepper, and onion into cubes/squares (not too small) and place into a bowl. Clean and cut the mushrooms in halves and place with rest of ingredients. Take spices and mix in with ingredients let it sit for 30 minutes and absorb the flavor. Take your cut pieces and evenly distribute them onto shish-kabob sticks. I grill them on the George Foreman grill for about 10 min.0 -

If you're not on pinterest yet, get it! OMG I have so many fun new recipes and idea from there I'll never be able to make them all. I have an entire board full of various dietary type recipes - low carb, gluten free, dairy free, paleo etc...
If you're googling though, look for recipes based on diabetic diets, weight loss surgery recipe blogs, south beath, atkins etc... they all eat low carb and there are tons of them out there.
My favorite thing is cooking in muffin tins.... you know exactly how many servings you have to put in the recipe builder and they are easy to take and nuke at lunch. I make little mini quiches and quinoa patties and turkey meatloaf type things in muffin tins all the time.0 -
My fave is my tuna wraps.
1-2 cans of tuna mixed with olive oil, tomatoes, celery, avocado, salt & pepper. Spoon over 3 large romaine lettuce outer leafs. Amazing & very healthy!0 -

I do the same thing with costco salmon. the portions are perfectly sized and it makes an ordinary salad a little more exciting.
I also throw extra chicken breasts on the grill and keep the pieces in the fridge for salads or quesadillas, lettuce wraps, etc. It cuts out a lot of time to make them in advance.
I also use spray olive oil and balsamic vinegar instead of slad dressings. It saves a ton of calories!0 -

i just use ground turkey and whatever veggies i have - any of the following usually -
onion
green pepper
garlic
spinach
chopped cabbage
riced cauliflower
seasonings
top them with salsa or a little hot sauce
cook them at 400 for about 25 minutes0
