    My breakfast this morning:
3 Tbsp cornmeal, cooked with water to make polenta

2 oz mushrooms & a quarter cup diced red onion, sauteed in cooking spray; added 2 cups chopped spinach, put lid on, let wilt; added 2 oz chopped up ham; fried two eggs in cooking spray

all on a plate, topped with a tablespoon Parmesan cheese

I bought more spinach so I can make it again tomorrow.

I make a traditional deviled egg recipe (egg yolks, salt, pepper, mayo, dill pickle relish) and then add in a can of deviled ham to the yolk mixture plus a teaspoon of Franks' - makes some real deviled eggs!! Low carb and more protein!
  • eggs-scrambled with bell pepperd, onions, and jalpenos! Thats what I had this morning and it was yummmmmy
  • Well, it all depends on whether you have boy eggs or girl eggs - and the dress code of the occasion.

Seriously, boy eggs DO NOT like being put in dresses and hats!

I suggest some Bermuda shorts, sunglasses and flip-flops. Add a bikini top if it's a girl egg.

    This^^^^is awesome^^^^

Love making deviled eggs and adding a nice helping of horseradish, then some fresh tomato and a piece of bacon with it, sooooo good. Or I like to make my breakfast ones over medium, cook up some mushrooms onions and bacon chunks (or sausage) and dash some franks red hot buffalo sauce on it, sprinkled with some cheese and have at it.

you can buy a cheap microwave egg poacher any grocery store, great for quick "poached" egg on top of 100 calorie thomas' light wheat english muffin (I use whites only) with a little ketchup or just salt. quick, low cal!

Now I eat hard boiled or healthy egg white omelets. But before I would have eggs (runny yolk) on top of white rice. I loved putting soy sauce and some salmon sprinkles on top (and some mayo) I know, sounds gross but it's yummy. But it made me full and bloated (and unf i don't eat Japanese rice anymore...miss it) but brown rice.

I've always loved scramble eggs with a couple tablespoons of habanero sauce. I received a bottle of ghost pepper sauce and that is really a kick! Only five or six drops will do it. I eat hab or ghost pepper sauce every day on something or the other.

Pico de gallo is a MUST have for my eggs lol

    Had this for lunch..

    BreakfastBurritos.png

Pretty easy, since I make up the burrtio
filling ahead of time, and store it in the
fridge. This is when I get to have bacon!

Take a fajita, half a slice of Swiss, and add
the filling. Nuke open face for 30 seconds.
    Add Pico, fold and eat!

    Homemade Pico....

For a meal, I'll eat two. One works for a quick snack.
The fajita size tortillas from Lowes Foods are the perfect
size, at 70 calories, and 65mg of sodium each.

The La Banderita fajita size tortillas are 78 calories each,
(not too bad), but they also have 154mg of sodium. Two
of the Lowes tortillas don't have that much.

    Alright, back to eggs...

My fave way is poached on toasted English muffins smeared with cream cheese, and a little salt and pepper. Only 250 calories and keeps me going all morning. So Yummy too.

    I make tamagoyaki ;3.

    2 eggs
    1 tsp soy sauce
    1 tsp sugar
Mix then pour into oiled skillet like you're making an omelet, but you roll it like a log, push it to one side, and pour more egg mixture and rolling until all the egg mixture is gone ;3.

I just recently got on a kick of eggs for breakfast ... I bought a new pan, one of those green pans (don't use spray oil on it though). One egg scrambled, put in the pan, add LOTS of chopped cilantro, some diced onions, sliced mushrooms, sliced mini bell peppers, fresh tomatoes and a small small small amount of shredded jalapeno jack cheese. Yum.

how does the green pan work? is it worth the money?

I love scrambled eggs in fried rice or sushi rolls. One of my favorite comfort foods is a poached egg on top of a stir fry of udon noodles, a ton of veggies, some soy sauce, and chili paste or siracha. And deviled eggs - oh my. My kids even ask for those for breakfast.

I eat what my two-year-old calls an eggie sandwich almost every morning - an egg cooked in one of those tiny one egg frying pans, a slice of cheese, and tomatoes all inside a Thomas' whole wheat 100 calorie English muffin, toasted.

Im not super big on eggs, but I do like the hard boiled... when i get bored of just plain hard boiled I will cut them up and sprinkle a little ranch seasoning on them (either the packet ranch seasoning or the popcorn flavoring works) Super yummy!

My favorite: saute lots of seasoned leeks, garlic, spinach, and roma tomatoes. Add egg whites and garlic feta cheese and put under the broiler. So delicious!
