I agree with everyone about Tilapia. It is a mild white fish and it's easy and fast to cook. You can even use one of the recipes ideas already shared and crumble up the fish to make yummy fish tacos with some grated cabbage for crunch. Another great and inexpensive white fish is Swai.

For oven: layer of citrus fruit slices then fish filets then top with more citrus slices and a couple sprigs of fresh rosemary in a 9x13 baking dish. Cover with foil and back at 350 for about 25-30 minutes

For grill pan: Coat salmon filets with Ken's Asian lite salad dressing and let sit for 35 minutes. Heat grill pan and coat with small amount of olive oil. Place fish skin side down and brush with run off of dressing. Turn after 3-5 minutes and finish cooking to desired doneness (i like mine medium rare).

    Good luck!!

Fish is the only meat we eat in my house! The george foreman grill was the best purchase. We throw tilapia, salmon, etc and its done in 5 minutes. We shake a little olive oil on it and sprinkle with greek seasoning, montery seasonings, parmesan and break crumbs.

We have also cooked it in foil with veggies and labne on top

Since I've started really keeping track of what I eat and (gasp!) looking at nutrition labels, I've realized that a lot of the pre-made seasoning mixes are WAY high in sodium. So I'd caution anyone using pre-mixed seasonings to use sparingly - or just make your own! I had NO idea that so many spice mixes were filled with lots of sodium, and hard to pronounce names of things that I don't understand, etc.

I agree. Make your own spices. Almost any spice combo off the shelf is available online as a mixed recipe. Then, you can adjust the salt to what you want. I also use mostly sea salt in my spices and rubs.

Also, if you live anywhere near a fisherman, find him or her. I fish and when the salmon come, I have some to give away. Today, I was given 8 - 16 inch trout. WIll be cooking tomorrow.

Another place to look for fish cheap is at family restaurant stores. In the Northwest, that is Cash & Carry. They have good fish at a better price than the grocery store. It is flash frozen and in 4 oz portions. During the winter, that is where I buy most the fish I eat.

You can easily steam any fish.
I don't have an oven here in Korea - so no baking.
Steam it and put a splash of lemon juice on it. Done.

    Hello,
I know i need more fish in my diet as we never eat it and not until about 6 months ago did i even think i could eat fish.
Any ideas on what to start on? Any tips on cooking it? Anyone know what fish works with what sides best.
Im thinking dinners to start with.
    Thanks in advance! ;0) xx

Grilled fish is one of my favorite eat out meals. Makes a great option for what is usually a high calorie death trap.... Grilled salmon, grilled trout, grilled catfish, Boiled shrimp, grilled shrimp, all great eat out options

My favourite fish dinner, takes 25 minutes:
1 salmon or trout fillet (about 3 oz)
    Cumin and paprika powders
    3oz new potatoes
    bag of baby spinach
    an egg
veg - carrots/broccoli/mange tout - whatever you like!
    1 lime

Place fish on a sheet of baking foil, sprinkle some cumin powder and paprika powder, or a bit of ground black pepper.
Squeeze some lime juice over it
Bring the 2 sides of the foil together and turn over,
Scrunch up the ends to make a little parcel
Put in a hot oven (200C) for about 15 minutes, or until the fish is opaque all the way through.
At the same time, boil the new potatoes, adding the veg in after about 8 mins.
Cook the baby spinach in the bag it came in (if it was pre-washed) - or in a covered bowl - microwave for about 3 mins.
    Poach the egg.

Plate up: spinach on the plate, new potatoes on top, crushed slightly. Put the egg on top of the potatoes, when the yolk breaks it's yummy! Put the fish and veg on the side. Around 350 cals, and a dollop of philly extra light on top of the fish works wonders :)

OHHHHHHH we are basking in the glory of all that is FOOD PORN!!!!!!!!!!!!!!!!!!!!!!!
You would have loved the seafood I prepared this weekend for our BBQ!!! You name it, I had it baby!!!!!!

Diver Scallops wrapped in bacon, thinly sliced garlic shavings, splash of vodka to flame them up with pink pepper (fresh ground peppercorns)

Salmon steaks with a light BBQ sauce made with Dos Equis, real maple syrup, herbs and spices - kissing it with the flame and caramelizing as it cooks... DEAR GAWD....

Cajun-Lime shrimp skewers - we are jumbo shrimp on steroids-jumbo!

I love a good fresh salad of dark leafy greens, colorful pepper strips, thinly sliced red onion, slivered almonds for crunch, cucumber slices, florets of broccoli, carrot peels and a homemade citrusy vinaigrette to splash on top!

I love freshly grilled zucchini with garlic, olive oil, sea salt, black pepper...

Fresh tuna on the grill is another very sexy thing to cook up... I make a Lime-Sesame dressing, on a rather vietnamese approach with fresh thai basil, marinated overnight and then flame-kissed.

DUDE, this is major food porn. Fresh tuna is sex on legs

Lots of great ideas here! I particularly loved the reminder about rendering a little bit of chorizo as a start to the dish - a great base for portuguese or spanish style dishes.

salmon and branzino are both tasty round fish that can be prepared pretty easily.

salmon en papillote is just salmon in a bag (or parchment paper). you can lay it on top of some quinoa or rice pilaf, and then add lemon, dill, salt, and butter. bake it in the oven for about 7 minutes and you're done!

branzino is also good with quinoa and brown butter drizzled over it. just pan sear the branzino until a little golden brown and slightly flaky.

I always put mine on a baking sheet on nonstick foil and bake at 425 for about 10-15 mins for salmon. Do the same for tilapia but a little less time.
My favorite way to make the salmon is just sprinkle jerk seasoning all over it and drizzle about 1 tsp. honey one each fillet. It is so wonderful.
