Greek Style Baked Chicken
Greek Style Baked Chicken
4 small boneless skinless chicken breasts
black pepper
2 small plum tomatoes, sliced
2 tbsp diced sweet red pepper
2 tbsp fresh parsley chopped
1/2 tsp oregano
2 garlic cloves, minced
1 cup feta cheese ( I use reduced fat)
1 tbsp olive oil
1) Preheat oven to 400 degrees
2) Use a well greased baking dish just big enough to fit the chicken breasts
3) Sprinkle chicken with freshly ground black pepper and set aside
4) In a bowl, toss together tomatoes, bell pepper, parsley, oregano, garlic and feta
5) Spoon over chicken and drizzle with olive oil
6) Bake 25-30 Minutes or until chicken is no longer pink
Nutrition info: This is what the recipe states, although I use reduced feta not regular so I'm not sure about the adjustments, I will have to subtract the difference I guess that regular feta has but have not done that yet

By the way, if you make this, the chicken is VERY moist and it smells kind of like pizza while it's cooking!! It's really yummy if you like feta :flowerforyou:0

I made this for dinner tonight. It was absolutely delicious. My children devoured it. They didn't even realize that it was a healthy dinner. I definitely will put this in my recipe box for future use.
