    I made this today!! I actually made a double batch. Just made a few small changes, but it turned out great!

    Batter:
    1 cup solid pumpkin
    1/2 cup unsweetened applesauce
    1 egg + 1 egg white
    1 tbsp canola oil
    1-2/3 cups all purpose flour (I used 1 cup whole wheat and 2/3 cup all purpose)
    1-1/4 cups sugar (I just used 1/2 cup brown sugar and 1/2 cup white sugar)
    1 tsp baking soda
    1/2 tsp ground cinnamon (I used more cinnamon)
    1/2 tsp ground cloves (I also added some nutmeg & ginger)
    1/3 cup walnuts (optional- I used 1/3 c. mini semi sweet chocolate chips instead)

    Filling:
    6 oz. reduced fat cream cheese
    1/4 cup sugar
    1 tbsp all purpose flour
    2 egg whites

    1. For filling, combine the cream cheese, sugar, flour, and egg whites in a bowl; set aside. In a mixing bowl, beat the pumpkin, applesauce, egg, egg whites, and oil. Combine the flour, sugar, baking soda, salt, cinnamon, and cloves; add to the pumpkin mixture. Stir in walnuts or chocolate chips.

    2. Divide half of the batter between two 8-in. x 4-in. x 2-in. loaf pans coated with cooking spray. Spread each with filling; top with remaining batter. (I made a double batch and used 2 larger loaf pans and 3 smaller ones)

    3. Bake at 350° for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely. Refrigerate leftovers.

    It was a hit here, my kiddos all gobbled it down! :drinker:

    I agree. I gave some to a couple friends and they LOVED it. Couldn't believe how low in cals it is for pumpkin bread!! Amazing! :drinker:

    I have this in the oven baking. I didn't use walnuts and I used 1/8 cup less sugar per loaf (so 1/4 less for the whole recipe). I also just used egg whites instead of a whole egg. I added up the calories in my recipe and it's far more than 107 for 2 slices of 1 loaf (cut into 14 slices). Mine came out to 174 calories for 2 slices (with the loaf cut into 14 slices) the way I made it (which would've cut down the calories a bit from the original recipe).

    I'm going to cut my loaves into 10 slices each and have 1 slice be 122 calories. Still not bad, but I don't understand how the recipe says 2 slices is 107 calories. I tasted the batter and it seems really sweet so next time I think I'm going to cut the sugar even more.

    Edit: This was my calorie breakdown for each loaf's ingredients:

    1/2c pumpkin 50
    1/4c applesauce 25
    1/2 tbs can. oil 60
    3 tbs liq. egg whites 25
    5/6c flour 333
    1/2c sugar 375
    1/2tsp baking soda 0
    1 tsp pumpkin pie spice ~0

    3 oz Neufchatel cheese 210 (this is "reduced fat cream cheese")
    1/8c sugar 90
    1/2 tbs flour 25
    3 tbs liq. egg whites 25

    Total Cal for 1 loaf: 1218

    1/14 of the loaf: 87 calories
    So, 2 slices = 174 calories
    Are you sure the original recipe doesn't say it's 207 calories for 2 slices? That would be about right.

    See where I'm confused? Do you see any obvious reasons I'm coming out with a significantly higher calorie count even though my alterations should've *cut* the cals from the original recipe?

    This website explains that 1 SLICE has 107 calories.
    I REPEAT -- 1 SLICE has 107 calories. That is, 1/14 of one of the loaves has 107 calories.

    Just think that may be an important bit of info. for everyone who thought the serving size is 2 slices for 107 calories. 2 slices of the original recipe will have 214 calories. That doesn't make it any less delicious, but it may make you think twice before reaching for the 2nd slice. :wink:

    In the above nutritional value I just posted, I used 1 cup ww flour, 2/3 cup white flour, 1 cup sugar, and no walnuts.
