Roasted Zucchini Chips

It's summer, there's a bunch of fabulous zucchini out there, and honestly - I'm just tired of grilling it the same way on the BBQ every time. So I went online and tried to find out if I could create crunchy goodness out of them and still be healthy (my healthy - allergic to wheat). I had to modify what I found, but here's what I did last night:

4-5 medium sized zucchini, washed, skin on
Slice about 1/4 inch thick
melt coconut oil - about 2 TBSP in microwave
Salt (I use the pink stuff in a grinder)
Pepper (love tellicherry for this)
Smoked Hot Paprika
Mrs Dash Onion & Herb seasoning

Toss sliced zucchini in with the seasonings and oil

Heat oven 250 degrees, bake for about an hour & half

I broke it into two batches - the first I wound up underbaking and they were more roasted and less crispy. The 2nd batch stayed in longer and turned brown and crisp. Both were fabulous and I ate all of it as it came out of the oven.
