On the way home from the store tonight my husband asked if we had any marinade we could use on the chicken we bought since we've been BBQing a lot then putting BBQ sauce on it. Why he waited until we were 20 minutes out of town instead of when we were in the store to ask is beyond me.
Anyway, I have a few basic baking ingredients, various types of cooking oil, and a ton of spices so if anyone knows any recipes for yummy marinades please share!
I looked at some online but many had a lot of little amounts of things that needed to go in it. I live 60 miles from town so I'm stuck with whatever I have in my cabinet.

Made an awesome dish tonight!!

We cut into chunks, marinated and did Kebabs.0 -
A great marinade is nonfat plain Greek yogurt . Just add the chicken marinate at least an hour but overnight is best. You can add any seasoning you like to the marinade or not . Chicken is so moist!0

Here's what my family uses for grilling chicken:
1/2 cp lemon juice
1/4 cp vegetable oil
2 tsp Worcestershire sauce
2 tbsp grated onion
2 garlic cloves, minced
1/2 tsp black pepper
1/2 tsp salt
Assuming about 8 servings, it works out to about 78 calories... Probably less since we leave some of the marinade in the bag.0 -

I've simply been marinading in tinned chopped tomatoes and spices such as a tikka masala mix or ground cumin and coriander, as the liquid of the tomatoes means you don't have to use oil!0

My favorite - best on the grill
4 boneless skinless chicken breasts
2 tbsp olive oil
2 tbsp fresh lemon juice
1 tbsp fresh rosemary minced (leave it out if you don't like it or don't have it - it's just a good without)
2 cloves garlic, minced
1/4 tsp salt
1/8 tsp pepper
You can marinade for an hour or all day. The longer you let it sit, the more lemon flavor it takes, IMO. I usually eat this off the grill and then use leftovers over salad greens.0 -
Chicken Kabob Marinade
1 cup soy sauce
1 cup pineapple juice
1/2 cup cooking oil
2 tsp dry mustard
2 tblsp brown sugar (i use splenda brown sugar)
4 tsp ground ginger
1 tsp ground black pepper
1/2 tsp garlic powder
1/2 tsp onion powder
Combine all ingredients in a small saucepan. Simmer 5 minutes. Cool before marinating chicken.0 -
Surely the pineapple juice is sweet enough that you don't need additional sugar?0
