Skinny KFC Famous Bowl (335 cals)

Man this photographed poorly...oh well. It's a totally full bowl of food even though it doesn't look like it here! haha

In case y'all hadn't noticed, I prefer to have skinny versions of "bad" foods than just eat low-carb wraps filled with raw broccoli and vinegar. So...here is a skinny version of the KFC Famous Bowls!

Now bear with me with the mashed cauliflower...I'm not a huge fan of it typically, but found that the additions I made here made it way better. Also, no gravy here, because I am not a fan.


Ingredients:

1/2 head cauliflower
4 oz chicken breast
1 tbsp liquid egg whites
1 tsp light butter
1/4 cup corn
1 slice FF Cheddar, torn into pieces (you can used pre-shredded cheddar, but I find the slices have more flavor)
1 tbsp Greek Yogurt
1 clove garlic
Salt, to taste
1/4 tsp Ranch Dressing Mix (optional)


Instructions:

1. Steam cauliflower until it falls apart with a knife or fork. Put your garlic clove in a food processor and whir it around until it is finely chopped. Then put in your cauliflower, tbsp yogurt and tsp butter, and continue chopping until the texture is smooth and creamy. Salt as desired, and stir 1/4 tsp ranch mix in.

2. Heat up a skillet, and cook your chicken in it until done in the middle, flipping occasionally. Each time you flip the chicken, brush the up-side with egg white to create a little crust on the outside of the chicken.

3. Once the chicken is done, chop it up into small pieces. Put the mashed cauliflower in the bottom of the bowl, then top with the corn, then chicken, and finally, the cheddar. Nuke in the microwave for about 1 minute to melt the cheese and VOILA! You're done :)

    This looks awesome. i love the idea of egg whites to make the chicken a little crispy. I have never tried the cauliflower "potatoes" because I don't like cauliflower, but everyone says it tastes like potatoes so maybe I will try your idea. Thanks for sharing.
