I was just searching for a lighter pumpkin pie recipe and I found THESE!!

Ingredients

* Nonstick cooking spray
* 1/2 cup LIBBY'S® 100% Pure Pumpkin
* 1/3 cup brown sugar blend (such as SPLENDA)
* 1 large egg
* 2 large egg whites
* 2 tablespoons vegetable oil
* 1 cup all-purpose flour
* 1 teaspoon baking powder
* 1 teaspoon NESTLÉ® TOLL HOUSE® Baking Cocoa
* 1/2 teaspoon ground cinnamon
* 1/2 teaspoon ground allspice
* 1/4 teaspoon salt
* 1/4 teaspoon ground nutmeg
* 1/3 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Mini Morsels

Directions

PREHEAT oven to 350° F. Spray 8- or 9-inch-square baking pan with nonstick cooking spray.

COMBINE pumpkin, sugar blend, egg, egg whites and oil in large mixer bowl. Beat with an electric mixer on medium speed until blended. Add flour, baking powder, cocoa, cinnamon, allspice, salt and nutmeg. Beat on low speed until batter is smooth. Stir in morsels. Spread evenly into prepared pan.

BAKE for 25 to 30 minutes or until wooden pick inserted near center comes out clean. Cool in pan on wire rack. Cut into 2-inch squares.

    I made these "brownies" today and they were......ok.

    First of all, I would not classify them as brownies - they are more like cake. When I think of brownies I think of ooey and gooey - these were very cake-like.

    I did make a few changes to the recipe: I used whole wheat flour instead of regular and I'm not a fan of allspice or nutmeg so I put in 1 tsp cinnamon and just a dash of nutmeg. I also cut them into 12 brownies instead of 16 because, let's be real, 1/16 of an 8x8 pan is a joke :wink: Here is the nutritional info for these with my alterations:

    ok, I tried to quote McFatterton but somehow I messed it up.

    McFatterton, I was trying to say I hate it when you find a recipe that looks SO GOOD you just have to try it, then when you finally do it's kind of a disappointment. lol, I have the recipe set out to try tomorrow ... so thanks for "testing" it out for us McFatterton :)

    Alright, I'm no expert, but I believe what makes things ooey gooey is oil and butter. :ohwell: BUT, I'd think that if you leave out some of the egg in the recipe, they won't be so much like cake. :wink: Oh, and undercooking them a little would result in more ooey gooey as well.
