I got back early from a trip to St. George. It was my first time without my precious MFP calorie counter. I had planned in advance what I was going to eat on my trip since I've been to the area several times and know it well enough, but it didn't go to plan. When I go down, I look forward to eating at Jack In The Box since we don't have one near where I live, and I got hooked on it when I was living at home in CA. So I plugged in that I was going to have an ultimate cheeseburger (my fave) with no bun. I get there, and OF COURSE they have their holiday egg nog shake advertised. Egg nog is one of my weaknesses. Without a whole lot of thought, I got the entire meal... Ultimate cheeseburger, fries, and egg nog instead of a soda. For some reason it all wasn't as mind-blowing as I remember it being. My thoughts: "Mmm, this is good... let's not eat it again!"
When I logged it in later, I saw that it was nearly my entire day's allowance on calories, putting me over by nearly 1,000 cals. There's a wake up call on food if there ever was one!
Ever since then I've been craving veggies. I called hubby on Sunday & asked him to make stir fry, and gobbled it up as soon as I got home. Man, I think I'll take stir fry any day over that gnarly old cheeseburger!

My wii came while I was gone, so I set it up Sunday and played Wii Sports, and worked up a light sweat boxing. It was great! I really like the boxing and baseball cuz I can just go nuts and sock it as hard as I want to. My arms are actually sore today from playing... but it's that good kind of sore you get after working out.

Tonight we're having meatloaf. Originally I was going to fix mashed potatoes and corn, but then I remembered a tip from the Biggest Loser a few weeks ago. After my baby gets up from her nap, we're going to the store to pick up some cauliflower and broccoli. I'm going to replace those mashed potatoes with mashed cauliflower. The corn is being replaced by the broccoli. I already logged it in, and it knocked off nearly 200 cals!
Will also be walking down to bus stop to meet hubby & walk back home as my exercise for the day. It's really nice out.

Hope everyone else is having a productive start to their week!

Totally! I like meeting friends I've made online.

I ended up not making the meatloaf tonight because we were out of a couple ingredients. By the time I got them, it was late. Hubby had leftover pizza from Friday, and I ran to Subways to try one of their fresh fit sandwiches.
Usually I get the cold cut trio with cheese, veggies, and dressing, but tonight I tried the black forest ham with lots of veggies and sweet onion sauce. I tell ya, that onion sauce is KILLER! I think next time I will be brave enough to try the veggie delite with the onion sauce.

All in all, I cut 200 cals from my dinner and came out ahead. Can't wait for my other Wii games to get here. I think I'm getting addicted in a good (very physically sore way), lol.

    TTYL & GL!

i had the meatloaf for you! i ate the chkn for my 3/4pm snack and then had leftover meatloaf for dinner. funny thing--i defrosted that meatloaf earlier in the day,but i didn't realize it was meatloaf! i thought i was defrosting yummy FATTENING sugary kugel. shame on me!
anyway, ate enuf, drank plenty of water today and am now off to bed.

hope everyone else enjoyed their day!

ps--there's a lady who posts named stillkristi who also lives in utah (salt lake?). i don't know if she still posts up on the boards or not. but her online persona is smart, friendly and committed.

    Stacey- what is sugary kugel?

Will sugary kugel take up 500 calories? For the first time, EVER, I have 500 calories left over from my meals and no idea what to do with it. Any suggestions?

sugary kugel==noodle pudding, a traditional jewish dish with egg noodles, eggs, cream cheese, sugar and more sugar and melted margarine? butter?

i only make it once in a while, as i'm sure you can understand.

trish--way to use up leftover cals fast is nuts + raisins or avocado. these are nutrient and cal dense foods. but not real bloating. it would take A LOT of carrots to get that 500.

and truthfully, if i wasn't hungry and had that much left, i'd just not eat it. some other day down the road, i bet i'd eat over my limit. kwim?

    later girls--:flowerforyou:
ps--this am i posted up on another q here--and got reminded why i stick to our thread! :explode: i know we all have our quirks, but some ppl are just whacko. that is all

Ya know... I'm not really hungry... was just worried about body going into survival mode. Will just chug water & chew gum till dinner and be a happy camper :)

Maybe stock up on some trail mix for future use though!

    Thanks :)

and lettuce hasn't been up for some time--when the kids were sick. i don't read a lot of the other threads so maybe they're over there??

    Hey all,
we made this potato, ham casserole thing for dinner last night and it was SOO yummy. I got it out of a weight watcher cook book that i've had and never though to make this recipe before. But I did and boy oh boy was it delicious. What got me is it's only 231 calories for 1/4 of a pan! Well a 8x8 pan but still, that's a lot of food and it was great, the kids ate it and I had it for lunch again today so I just had to share :flowerforyou: If anyone wants the recipe just let me know.

Hi all! Sorry I've been gone for a few days. DH is working at the Renaissance Festival since the 2nd weekend in Oct. He's not a performer. He's in Safety Services which is a combination of security and first aid. So he's been working his regular job M-F & working the Renaissance Festival Saturday & Sunday. I was busy this past weekend keeping the kiddos entertained. DH was able to get me a complimentary ticket, so the kids and I are going this Saturday. My daughter loves going because she gets to have her hair braided.

So I got around to fixing that meatloaf tonight. I also made mashed cauliflower for the first time. Oh my GOSH, this stuff is AWESOME! I highly recommend trying it if you are looking for a low carb alternative to mashed potatoes. The texture is very similar to real mashed potatoes, and you can season it however you want. It is wild! You fix it the same as real mashed potatoes (chop it up, boil it, mash it, add milk & a little butter, and season to taste)
    Have a great night everyone

I've always wanted to try those, i've just been to chicken to actually do it. Last time I was at the store I had the cauliflower in hand then went and put it back LOL
I'll try it this week, I'm trying to challenge myself to eat one new veggie every few weeks or so. Not that this is a new veggie but it's def. something different

    'night ladies
  • Hey everybody! so last night we had mc donalds I know terrible me. So I got a grilled chix with tom lettuce and who would've thought that that was worse than a beef cheeseburger!!!! Oh my goodness I put on over 800 calories. It didnt' help that I pigged out on candy either :( so last night I spent my evening on the elliptical undoing the damage that I did. And I did it! lol

For the mashed cauliflower. How do you get it creamy as the potatoes. I tried it once and it kind of backfired but i'd love to try it again. They were just too chunky. It was like eating little chunks of cauliflower. Did I not cook it long enough?

Another good thing to eat is sweet potatoes. And normally I don't really like them when they're baked. So I make sweet potato fries a lot. Wash them, cut them up into wedges add olive oil to coat lightly then add seasonings. I vary between using a few of the following: Cajun seasoning, garlic, oregano, red pepper, black pepper. I even do cinnamin with cajun sometimes. Its like sweet and spicy. Hope someone likes it they're really good!

So I finally bought a hrm and I'm just waiting for them to ship it. I really can't wait to see how on or off my elliptical is.

Also great news!!! This past saturday I went to see my cousin/bff and her brand new baby boy (awesome news but not the one i'm getting at  ) and I weighed myself on her scale (remember I still didnt buy one of my own) and she said it's pretty on from her doctors and it said ......drum roll please..... 127!!!! I can't believe that! Its so exciting cause that number wasnt moving at all!!! I didn't really think it was possible cause it's been about 1 month since I last got weighed at the doctor at 132. I even asked my hubby if that is right or not. He laughed at me and said wel don't you realize how awesome you've been doing! How sweet is he! So yes I need to update my profile because I lost 5 pounds since starting!!! Can you tell I"m excited?? but before I do that I'm still going to double check it on another scale. :( I just don't want it to be too good to be true ya know?

Anywho its time to go play with my kiddies! I hope everyone has a great day today.

And oh yeah Shera. I wanted to tell you a special thank you to your husband. I know he's in the military so I wanted to pass on a litle thank you for him helping to keep us all safe.!

Bilimina, the great thing about your Mickey Dee's adventure is that today is a new day!

As for the cauliflower... I steamed them until they were soft (about 15 mins), and then I just mashed the crap out of it, LOL. I did a little milk, and a lot of butter (we use Smart Balance). I mashed it until it was slightly lumpy, y'know... about as lumpy as real mashed potatoes. I actually ended up putting 1/2 of my meatloaf back because the mashed cauliflower filled me up.

i just finished my exercise. why is it that at the end of the day i realize all the ways i could've made better choices eating-wise earlier in the day? seriously. i've been doing this since march, i am 38 y.o., educated--and i still can't consistently control my food choice?! :grumble:

at least i did exercise and i drank a decent amt of water.
    here's to a better tomorrow!
  • Hey girls Happy Thursday!!

So the scale didn't lie this morning I officially lost 5 pounds!!! I'm so excited I could shout it to the world. And the best part about it all is I really do feel pretty good everyday. I used to hate crawling out of bed. I was always so tired. And now I feel great.

Question? When you girls were talking about making your meat loaf, how did you make it? What ingredients did you use??

If you can believe this or not :) I'm not the worlds greatest cook so I am always looking for something easy and healthy to make for dinner. Our chili, spaghetti, and tacos are kind of getting old on my tastebuds lol.

    Talk you ya'll later :)

Um... I think I broke my scale. I just weighed in and it said 241.8. I just weighed myself the other day, and was still at 244. Did I get rid of 3 lbs of water or something?! LOL
Maybe my eyes are going bad and it said 247? I dunno! I just can't believe it, but I'll take it. I'm just floored because I haven't been working out because of inclement weather, illness, and other excuses. I had a rotten weekend calorie-wise, too! I've been playing Wii Sports, but didn't think it had been burning THAT many calories.
    I'll quit rambling now. :blushing:
