  • I made this last night and it did not turn out good. Not sure what I did wrong. Since there were no measurements on the pumpkin pie spice or sweetener, I wasn't sure how much to add and it was a bit of a guessing game. Maybe I just didn't add enough, but I wasn't pleased with it. I have enough to make it again, so hopefully it turns out better next time.

    Oh, and I used a lite cool whip for the topping.

    I make this too......usueally for breakfast.......and I add in 2 T flax seed........very filling and HEALTHY. I top mine with a small carton of activia vanilla light yogurt. YUMMY!:love:

    I found this on tumblr and had to share, whoever made this is a genious. I love anything pumpkin!

    Ingredients:


    1/2 c. pumpkin puree
    1/4 c. egg whites (from an egg or carton)
    Sweetener
    Cinnamon or pumpkin pie spice
    Directions:

    Mix together all the ingredients.
    If you prefer a flan-like texture, add more pumpkin; if you prefer a cake-like texture, add more egg whites.
    Microwave for two minutes.
    Use a mix of Greek yogurt, hazelnut cream cheese, and pumpkin pie spice for the icing.
    Top with toasted pecans.

    NO- the pie filling has spices, sugar and I think eggs all ready added.....
